👄 on the palate it is dry, with a pleasant acidic nuance and a faint bitter aftertaste, resulting in a product with a precise character but easy to drink. Very pleasant.



RECOMMENDED COMBINATION

The gastronomic combinations are those typical of lively Freisa: from appetizers to first courses that are not too structured. Also worth trying with white meats.


REFINEMENT

Pure Freisa from loamy marly matrix soils, vineyards in which the silty, clayey and sandy components are balanced in its parts. Every year the best batch of Freisa from the Cornareto hill is vinified separately and bottled when the wine has completed its natural aging cycle. The liveliness of this product is linked to the traditional process which involves, before bottling, the addition of a part of sweet wine into the autoclave, thus determining a small alcoholic refermentation which enriches the wine with its typical bubbles. The name derives from the ancient tradition of bottling following the lunar calendar.

TERRITORY OF ORIGIN

TERROR

The area is Monferrato, one of the most important wine regions in the world, a UNESCO heritage site. Among these suggestive hills Barbera is produced, a truly extraordinary, versatile and fresh vine. In Monferrato the vineyards almost entirely cover the tops and slopes of the hills, alternating with small woods, in highly evocative landscapes. The wide diversity of the soils allows us to produce very complex wines, with a broad bouquet. The soils are calcareous-marly, white, light gray or beige in colour, rich in calcium carbonate: this allows us to produce full-bodied wines, rich in color (in the reds), sometimes with a hint of tuff, for ageing; the red soils, on the other hand, are deeper and richer not only in clay and silt, but also in iron and magnesium oxides, and are excellent for producing white wines. The sands of Asti produce excellent red wines characterized by low acidity and fast maturation. Finally, on these soils, in very dry years the vine can suffer problems of water stress, since the higher percentage of sand does not allow the soil to retain water.


CELLAR

Cascina Gilli's production adventure began in 1983 with Gianni Vergnano, who had the intuition to invest in this territory, believing in its great potential compared not only to Monferrato, but to the entire winemaking panorama of Piedmont.

The first bottles were put on the market in 1985, immediately meriting inclusion in the first issue of Gambero Rosso's "Vini d'Italia".
Since that moment the company has not stopped believing in the potential of the native vines of these hills, remaining consistent with the belief that each terroir must express its specific vocation and each winemaker must be a guardian and innovator of the traditions of his land.

The cellar has a collection capacity of 3,500 hectoliters and is equipped with the most modern technologies while using traditional winemaking methods, in total respect of the typical nature of the territory. Production remains limited and very careful, around 90,000 bottles per year.
