NOTES FROM OUR SOMMELIERS

👁 a beautiful straw yellow;

👃🏻 the nose expresses a complex bouquet, with notes of fresh fruit including green apple, peach, lemon and apricot, floral, with acacia flowers and jasmine, and minerals.

👄 in the mouth it is dry and fresh, full-bodied, with returns of fruit accompanied by a very pleasant mineral note. Soft, dry, long finish.


RECOMMENDED COMBINATION

An aromatic white, soft and full flavour. From the point of view of intensity and drinkability it requires pairings by analogy: it prefers dishes scented and not too structured as it has a medium body.


REFINEMENT

Manual harvest, at the end of September, when the grapes are ripe and have good phenolic maturation to have an adequate level and a good relationship with acidity. Full vat fermentation with regulation of the full-empty ratio based on the presence of CO2 and temperature control; left on the fine lees with regular batonage. Malolactic fermentation carried out. Without added sulphites. Aging in steel for at least 12 months.

We are in the Trento DOC area, home of renowned bubbles, which stands out for elegant wines that express a unique concept of territoriality. The success and particularity of Trento DOC sparkling wine is due precisely to the characteristics of the territory: the combination of climate, different altitudes, soils and Trentino savoir faire make Trento DOC not a simple sparkling wine, but a highly prized mountain sparkling wine, increasingly recognized and awarded.
The Trentino area, although small, is covered by 10,000 hectares of vines with a percentage of grapes destined for the production of sparkling wine of 8% and a total production of 7 million bottles per year.
The vines can enjoy different climates: we go from a mountain microclimate to the milder one of Garda.
Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties grown for Trento DOC sparkling wine are chardonnay and pinot noir.
The surface area of ​​organic vineyards in Trentino is continually increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards the healthiness of their products.


CELLAR

Giuliano Micheletti dedicates himself with passion to his vineyard, located in the heart of the agricultural countryside of Trento, which, over time, has been incorporated by urban growth, now finding itself among the modern skyscrapers of Man, a lively suburb. This unique position makes it an integral part of the "Collina di Trento", an initiative that promotes sustainable agriculture and the link between city and countryside.

His work goes far beyond the simple production of grapes: Giuliano sees his vineyard as an oasis of nature and beauty, a poetic refuge amidst growing urbanization. Cultivate the land in a sustainable and environmentally friendly way, without the use of chemicals. With just 3.3 hectares of vineyard land, this winery demonstrates that even a small surface area can have a significant impact, both for the production of quality wine and for the promotion of deeper values ​​linked to the land and tradition.
