👁 of a beautiful luminous amber yellow;

👃🏻 the nose is intense, with hints of dried figs and dried almonds, tropical fruit and a light and elegant background of aromatic herbs such as mint and sage;

👄 on the palate it is sweet at the right point, with a pleasantly almondy finish: the acid part is very pleasant.

Les Petis Filles is a sweet wine. As a good practice, sweet wines goes with desserts, and this Passito pairs perfectly with desserts such as "grandma's cake", almond paste but also aged cheeses.

WINE-MAKING AND REFINEMENT

The DOC Bivongi, in Calabria, is one of the lesser known enological realities in Italy, but it has potential that intrigue even the most expert palates.
Sweet dessert wine made with ripe white Malvasia grapes which are left to dry immediately after the manual harvest in September until the desired sugar content is obtained. Fermentation takes place at a controlled temperature of 18 ° C.

ORIGIN

TERROIR

The winery is located in Bivongi, in the province of Reggio Calabria.
This area is conditioned by the typical tectonic structures in the geological context of the Central Mediterranean. It corresponds geographically to the part located south of the Strait of Catanzaro, the isthmus characterized by a narrow elongated valley of about 30 km that unites the two coasts, Ionic and Tyrrhenian, and which is the narrowest point of the entire Italian peninsula. The soils are different, the terraces mainly calcareous on layers of volcanic origin between the Apennines and the Tyrrhenian Sea. This determines the production of dense and structured wines, with powerful tannins and great potential for evolution, generally obtained from Magliocco, while the clayey-limestone formations of the hills of the Ionian side favor the Gaglioppo and the production of slightly colored, savory and mineral red wines.


WINERY

The winery began its business with the renovation of a vineyard in 1998; and it was soon converted into certified organic production. The owner, Cosimo Murace, is a chemical expert and oenologist.
In addition to wine, the company has an important production of extra virgin olive oil, Mosto Cotto and Passito wines.
They are located in the heart of the Bivongi DOC area, the last born among the appellations in Calabria. In the territory there are still many old native vines, which contribute with their history to expand the regional and national ampelographic heritage.
The company's vineyards are located in "Fiorello" in the Agro di Bivongi and extend for less than 4 hectares. The training system used is the espalier, while the vines are pruned with "spurred cordon" and "guyot", obtaining a maximum yield of about 9 quintals/ha. Cosimo's greatest attention, in the vineyard, is aimed at phytosanitary protection, always respecting organic management, while the cultivation operations are partly mechanized (green manuring), partly carried out manually (harvest, pruning, green pruning).
