Production and refinement

The wine is produced from vineyards in Leporano, Apulia, a historic area for Primitivo di Manduria, where vines are traditionally trained using the alberello method. The soil is calcareous and clay-rich, ideal for giving the wine structure and minerality. Harvesting is done manually with great care to select only the best grapes.

After manual harvesting, the grapes are pressed and fermented on the skins at a controlled temperature. The wine is then aged in French barriques for at least 10 months, adding complexity and roundness before bottling.

Feudi Salentini

Feudi Salentini was founded in 1994 in Leporano, Apulia, in one of the most beautiful areas of Salento, surrounded by vineyards, centuries-old olive trees, and overlooking a crystal-clear sea. The name of the winery recalls the Feudal era, when carriages and castles were prominent in the region and wine was already an essential part of life. The winery draws on three generations of experience in crafting premium wines, supported by the optimal climate conditions created by the gentle Ionian breeze along the coast. Feudi Salentini expresses its commitment to quality through a range of wines with ancient roots—where sun and savoir faire do the rest.

Feudi Salentini

A constant commitment that has led to important, even international, awards—significant achievements for a young and motivated group led by Cosimo and Maria Teresa Varvaglione, who every day continue to write a story built on quality and love for the land. On their estate’s soils, the vines are still cultivated using the traditional bush training method, and the grapes are hand-harvested, as per tradition.

Puglia

The sun, the sea, and the wind: three characteristics of Puglia that give rise to intense and unmistakable wines.

Puglia

The introduction of viticulture in Puglia dates back to antiquity when the Greeks colonized the region and brought with them the culture of the vine. The cultivation spread further thanks to the expansion of the Roman Empire and Christianity, which promoted wine production for liturgical celebrations. Over the centuries, Puglian viticulture has evolved, with the cultivation of native varieties such as Primitivo, Negroamaro, and Bombino Bianco, becoming an important sector of the local economy.

Today, Puglia is one of the leading wine-producing regions in Italy in terms of hectoliters produced, with increasing attention to product quality and national and international recognition.

Puglian vines grow in sunny and windy areas, with a Mediterranean climate characterized by very hot and dry summers and mild but rainy winters.
These climatic conditions, combined with the vast coastal area with the breeze and the influence of the sea, create an ideal microclimate for vine cultivation. In particular, the strong temperature variation between day and night during the ripening months of the vine gives the grapes a unique and distinctive character.
The Puglian vineyard has been designed based on pedoclimatic conditions, and the native grape varieties cultivated here are able to adapt to the arid and stony soils of the region, which are typically limestone in the Salento area (where fresh and acidic wines are produced) and clayey in the north of the region (where production focuses on structured and tannic wines).

Salento

The Salento is the southernmost area of Puglia. The ancient Land of Otranto, famous for its millenary history closely linked to the Mediterranean Sea by which it is bathed. Salento is one of the regions in Italy where the winemaking tradition has deep roots, as quality wine has been produced here for 3000 years.

The warm climate and diverse soils are ideal places for vine cultivation. The main grape varieties are Negroamaro and Primitivo, from which full-bodied red wines are derived, and the famous Negroamaro rosé, a wine with intense color and pleasant freshness.
In Salento, the alberello technique is practiced, a vine training system shaped like a low tree, which allows for a greater expression of the terroir's characteristics.

An interesting fact: the art of "Taranta wine" is a traditional Salento practice in which winemakers sing and dance the typical regional dance (indeed, the tarantula) among the vineyards during the winemaking process, creating a festive and engaging atmosphere that involves locals and tourists alike.

In the heart of Salento, amidst millenary history and the Mediterranean Sea, the winemaking tradition has shone for over 3000 years.

Recommended pairings and dishes

Matching by concordance

The robust structure and aromatic concentration of Primitivo pair well with equally intense and full-bodied dishes, or preparations involving long cooking times and rich sauces. Its persistent tannins and fruity complexity echo the bold, spiced flavors of the food, creating a satisfying and well-balanced tasting experience.

Matching by contrast

The wine’s good freshness and dryness help balance dishes with rich and complex components, such as succulent meats or intense cheeses. Its firm tannins cleanse the palate, breaking through the persistence of fat and enhancing the enjoyment of each bite. This contrast between structure and softness elevates both elements, creating a harmonious experience.

It pairs well with

Rich and flavorful dishes: grilled or roasted red meats, game, braised and stewed preparations. Also perfect with aged and savory cheeses, perhaps paired with jams or honey to enhance the wine’s complexity.

Venison stew

A venison stew (or other types of game meat) is a very flavorful dish: the meat is simmered with carrots, onions, and mushrooms, and served with a very thick white sauce. This dish is suitable for intense and highly satisfying pairings.

Roast Duck

A very famous, refined, and elegant main course that is prepared in a rather simple and quick way and is highly satisfying. Duck meat has an intense flavor that pairs well with the citrus aromas of orange and is generally enriched with herbs like thyme and rosemary. An explosion of flavor and aromatic intensity.
