WINE-MAKING AND REFINEMENT

Produced in the hilly area of Pergine Valsugana, at an altitude of over 500 metres, from a porphyry clay soil. The vineyard is trained on the Trentino pergola system. The grapes undergo destemming and subsequent cold maceration. White vinification and fermentation at controlled temperature. Brief ageing in stainless steel and subsequent maturation in the bottle for a few months to enhance the fragrance of the variety.

ORIGIN

TERROIR

We are in the Trento DOC territory, home of renowned bubbles, which is distinguished by elegant wines that express a unique concept of territoriality. This terroir has extraordinary potential: the combination of climate, different altitudes, soils and Trentino savoir faire give rise to highly prized mountain wines that are increasingly recognised and rewarded. The Trentino territory, although small, is covered by 10,000 hectares of vines and is increasingly making its mark on the national scene and beyond.

The vines can enjoy different climates: from a mountain microclimate to the milder climate of Lake Garda. Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties cultivated for Trento DOC sparkling wine are chardonnay and pinot noir. The area of organic vineyards in Trentino is constantly increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards the wholesomeness of their products.

WINERY

The history of Cantina Monfort began in 1945 in Palù di Giovo, in the Cembra Valley. In 1951, the business was transferred to new premises in Lavis and in the mid-1960s, with the purchase of the cellars of Palazzo Monfort, the company expanded significantly. Today, under the name of "Cantine Monfort", several product lines come to life: "Casata Monfort", Trento DOC and "Terre del Föhn": all wines marked by the enhancement of the territory and its potential. The winery's activity has always been aimed at respecting tradition and the search for quality, with the objective of giving life to a project to valorise autochthonous vines, including lesser-known ones such as San Lorenzo, Wanderbara, Veltliner and Vernaza.
