NOTES FROM OUR SOMMELIERS

👁 onion skin pink with very fine and persistent perlage;

👃🏻 on the nose it expresses fine notes of flowers (wild rose) and small red berries (raspberry);

👄 on the palate it has a refined freshness and the delicate fruity notes confirm its great elegance; dry, dry, elegant.

RECOMMENDED COMBINATION

An elegant wine rich in flavour, capable of pairing well with dishes featuring medium fatness. Ideal with fish, shellfish, seafood but also with delicate cured meats.

REFINEMENT

Grapes harvested by hand with selection of the bunches.

Very slow and soft pressing of whole bunches. It owes its delicate and constant color to the maturation of the submerged cap skins. Fermentation takes place in stainless steel tanks at a controlled temperature with indigenous yeasts. Aged for 30 months on the yeasts and 6 in the bottle.

TERRITORY OF ORIGIN

TERROR

The company is located in Franciacorta, a territory among the most important In the national panorama for wine . It overlooks the southern shore of Lake Iseo and extends to the city of Brescia, a territory of hills carpeted with vineyards and shaped by small stone villages, crenellated towers, castles, prestigious wineries, ancient palaces and silent monasteries. The expansion and retreat of the glacier have in fact transported a lot of debris which has enriched the soil in a diversified way with added minerals, different from those deriving from the rocks present in the soil.

In addition to the terrain, the climate also contributes to characterizing the different areas of Franciacorta: therefore in the North there is the influence of the mountain breezes of Val Camonica and Lake Iseo, in the South the warmer plain, in the East the hilly breezes and the strong daily temperature range and to the West still gentle hills and fertile plains.

Franciacorta is the main wine of the area: a sparkling wine very elegant And structured , made with the Classic Method which involves the second fermentation in the bottle, for which several years of permanence on the yeasts are required (18 months for the Brut, 24 months for Satèn and Rosè, 30 months for the vintage wines and 60 for the Reserves ).

Considering the different dosage of " liqueur " added after disgorgement, starting from the least to the most dosed, we speak of Pas Dosè, Extra Brut, Brut, Extra Dry, Dry, Demi Sec. Satèn, finally, is a Brut with a pressure of less than 5 atmospheres. Franciacorta is produced with Chardonnay, Pinot Bianco and Pinot Noir grapes (winemakers' cross and delight), and in recent years also with Erbamat, a rediscovered native vine.

CELLAR

The La Valle company is located in Rodengo Saiano, in the heart of Franciacorta, in a beautiful hilly area, particularly suited to viticulture, near a famous 11th century Olivetan abbey, a few km from Lake Iseo and Brescia , in Lombardy. It owes its name to the main land of the company, called La Valle, purchased by the ancestors of the current owners way back in 1890 (as evidenced by an ancient notarial deed) and has always been cultivated with vines.

The company's historic vineyards, including "La Valle", "Roccolo", "Bredina", "Tesa", enjoy an extraordinary and unique exposure and microclimate and give special grapes from noble vines: chardonnay, pinot bianco and pinot noir; rich in aromas, scents and flavors. It is managed by the Pezzola family, who released the first 3,000 bottles of vintage wine in 1993, some of which are still jealously guarded in the cellar.

In the following years, the collaboration of the children, the love for the land, for its grapes, and the consultancy of prestigious winemakers, including Jeanne Pierre Valade, have made La Valle a well-known and consolidated brand of quality Franciacorta and niche.

The secret is the combination of a respectful and attentive approach to the natural dynamics in the vineyard and the most equipped technologies in the cellar. Six hectares of vineyards, for a small and well-kept production.
