Production and refinement

Single-varietal Pinot Noir produced in the Côte des Bars, on clay-limestone soils rich in chalk.
Manual harvest with gentle pressing in a horizontal press.

Alcoholic fermentation in temperature-controlled stainless steel tanks (18°C), followed by malolactic fermentation at 20°C and filtration prior to bottling. Aged for at least 24 months on the lees in bottle. Reserve wines are matured using the Solera method. Zero Dosage: no sugar added at disgorgement. Bottle-aged for 2 years.

A beautiful bright straw yellow color with an extremely fine and persistent perlage.

Olfactory examination

On the nose, it is complex, broad, and refined, with prominent aromas of ripe peach, acacia, raspberry, and lychee.

Binon-Coquard

In the heart of the Aube, a land of charm and authenticity, Champagne Binon-Coquard was born in 2000 from the vision of Maxime, a young winemaker with the ambition to create an independent maison rooted in tradition. With the help of his parents, he built his own pressing house, complete with fermentation vats and cellars, and in 2003, at just 24 years old, he produced his first harvest.

In 2012, his sister Cyrielle joined the family venture after gaining experience in Ireland, bringing with her an international perspective and solid expertise in the wine industry. Today, she manages the estate and coordinates the seasonal activities, while still dedicating time to hands-on work both in the vineyard and the cellar.

Binon-Coquard

Their 6.5 hectares of vineyards, with an average vine age of about 25 years, have been certified Terra Vitis since 2012, reflecting their commitment to sustainable viticulture and environmental respect.

The wines of Champagne Binon-Coquard express a lively and contemporary personality, the result of a virtuous balance between artisanal know-how, youthful dynamism, and a deep connection to the terroir. A family story that dates back to 1669, now translated into a unique style that combines finesse and character.

The vineyards of Champagne, stretching 150 km east of Paris, challenge the extreme conditions of the northern climate. Situated at the 49th parallel north, the grapes are cultivated with the help of the ocean's influence, which moderates the temperatures, and the extraordinary skills of the vignerons.

Average temperatures, just above 10°C, promote the slow ripening of the grapes, preserving their natural acidity. Despite the humid climate and frequent spring frosts, the region produces ideal grapes for Champagne, thanks to soils rich in chalk and other mineral components. The vineyards, spread over diverse terrains, extend across hills and plains, capturing the essence of the Mistral wind and the few hours of available sunlight.

Aube

On the border of the Chablis region, in the heart of the Aube, lie the hills of Bar-sur-Aube and Bar-sur-Seine, two areas that showcase a wilder, more authentic, and ever-evolving side of Champagne. Here, Pinot Noir finds its ideal terrain: calcareous soils mixed with clay give the wines a unique profile, combining freshness and depth.
