Production and refinement

From a 0.3-hectare vineyard with southern exposure, situated at an altitude of 750 meters above sea level, on loose, skeletal-rich soil, predominantly composed of schist and limestone. Harvested in the first half of September.

Grape crushing and destemming; maceration for a single pressing cycle (approximately 2.5 hours), followed by the start of fermentation. The wine is bottled before fermentation is complete, allowing natural effervescence to develop, with bottle aging for 4 months. Vinified without added sulfites.

L'azienda è situata in Val di Susa, una regione con una lunga tradizione vitivinicola, recentemente nota alle cronache per altre vicende. Stefano Turbil coltiva con cura e dedizione i suoi vigneti, che si trovano su antichi terrazzamenti oltre i 700 metri sul livello del mare, a rischio di abbandono.

La Chimera con passione ha contribuito a salvare dall'estinzione due uve storiche della Val di Susa: l'Avanà e il Becuet. Il tutto in tre ettari di montagna.

In Piedmont, the first traces of viticulture date back to pre-Roman times (precisely to the Bronze Age, around 1500 B.C.), and although today the peak of quality is found in the region's great red wines, Piedmont also produces excellent white wines and sparkling wines.

The role of Piedmont has been fundamental for the development of modern Italian winemaking. It is here that the first examples of zoning of wine-growing areas were recorded, introducing concepts such as terroir and cru to Italian wines. Thanks to zoning, if a wine is produced exclusively from grapes coming from a single vineyard or parcel, the geographical indication appears on the label, increasing its prestige.

In addition to the geographical delineations indicated on the map, Piedmont is divided into 8 zones that group the 16 DOCG and 42 regional DOCs. Among these, we remember in the north the famous Gattinara DOCG and Ghemme DOCG, near Turin the Erbaluce di Caluso DOCG, in Monferrato the Barbera del Monferrato Superiore DOCG, Brachetto d’Acqui DOCG, Dogliani DOCG, Ovada DOCG, Gavi DOCG, and Ruchè di Castagnole Monferrato DOCG, ending with Roero DOCG to the left of the Tanaro river and, in the Langhe region, with the famous Barolo DOCG, Barbaresco DOCG, and Dogliani DOCG.

In Piedmont, the revolution in the world of wine began, bringing Italy back to the forefront of high-quality production. Here, with few exceptions, single-varietal wines are produced, which best express the characteristics of the terroir and magnificently exalt the Piedmontese territory.

Val di Susa

The Val di Susa, located in the province of Turin, is a unique territory in the Piedmontese wine landscape, renowned for the production of Valsusa DOC wines. These wines are produced in 19 municipalities stretching from Almese to Exilles, all part of the valley that gives the denomination its name.

Val di Susa benefits from a unique microclimate, shielded from the cold northern winds, as evidenced by the presence of certain plant species typical of Mediterranean climates. This environment, particularly favorable to viticulture, is characterized by dry summers with only 20% of the annual precipitation, high winds, and excellent sunlight exposure. Such conditions allow for the cultivation of vines at altitudes exceeding 850 meters, a rare situation in Piedmont, which has fostered the development of native grape varieties such as Avanà, Becuet, and Baratuciat. These grape varieties have perfectly adapted to the local climate, developing unique characteristics that give the valley’s wines a strong typicity.

The vineyards of Val di Susa are situated on rocky soils with varying slopes, often organized in terraces supported by dry stone walls, typical of the mountainous landscape. The different types of Valsusa DOC wines are typical mountain wines: subtle, aromatic, and with good aging potential.

Valsusa DOC is produced in both red and novello red varieties.
