RECOMMENDED COMBINATION

This Trentino sparkling wine is a blend of Chardonnay and Pinot Noir , it prefers fresh and light dishes as it is highly drinkable. Perfect to accompany fish-based starters and first courses. An advice? Try it with shellfish.


REFINEMENT

This Trentino Brut comes from vineyards at 500 meters above sea level, in Valsugana, in the Rore area. The vineyards face south, and the excellent solar radiation and temperature range allow perfect aromatic development of the grapes and good acidity.

The harvest of Pinot Noir and Chardonnay is manual, and takes place between the end of August and the beginning of September. Vinification in steel and transfer to an autoclave for the second fermentation typical of the Charmat Method, with a very long secondary fermentation of 50 days.

TERRITORY OF ORIGIN

We are in the Trento DOC area, home of renowned bubbles, which stands out for elegant wines that express a unique concept of territoriality. The success and particularity of Trento DOC sparkling wine is due precisely to the characteristics of the territory: the combination of climate, different altitudes, soils and Trentino savoir faire make Trento DOC not a simple sparkling wine, but a highly prized mountain sparkling wine, increasingly recognized and awarded.

The Trentino area, although small, is covered by 10,000 hectares of vines with a percentage of grapes destined for the production of sparkling wine equal to 8% and a total production of 7 million bottles per year.

The vines can enjoy different climates: we go from a mountain microclimate to the milder one of Garda.

Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties grown for Trento DOC sparkling wine are chardonnay and pinot noir.

The surface area of ​​organic vineyards in Trentino is continually increasing , a natural consequence of the attention and responsibility of sparkling wine producers towards the healthiness of their products.

CELLAR

The Ferrai agricultural company is located in the only point where the Valsugana wine area widens, on the slopes that lead from the Brenta to the town of Telve, and was born from the synthesis of passion, dream and strong union of a family. It is a small production company that was born in Telve and follows all the processing phases in the vineyard and in the cellar, to obtain an artisanal product that is as natural as possible.

In the 2.5 hectares of vineyards they mainly cultivate traditional vines, both white and red, among which some very rare pre-phylloxera varieties that still exist stand out. Among the grapes grown, it should be noted that the company has saved the variety called Vernaza Zinesa from extinction.

Ferrai's production is careful and very small and is around 9,000 bottles.
