Production and refinement

The vineyard is located at an altitude of 1100 meters above sea level, with roots in moraine soils rich in sand and good organic matter. The vines are trained on a low pergola system, with traditional wooden and stone structures. The grapes are hand-harvested.

The base wine undergoes its first fermentation in large wood (larch and oak) and in stainless steel. It is then traditionally refermented in the bottle using the Classic Method. The disgorging takes place no earlier than 72 months spent on its lees.

Organoleptic analysis

Visual exam

It has a beautiful straw yellow color with golden reflections, featuring fine and persistent bubbles.

Olfactory examination

On the nose, it stands out with floral aromas, complemented by notes of ripe Golden apples and flint.

Tasting

On the palate, it is full-bodied, with notes of Granny Smith apple and lime honey reappearing. It stands out for its warm, fresh, savory, and harmonious taste. The finish is long.

Cave Mont Blanc

In the heart of the Alps, where nature demands strength and dedication, Cave Mont Blanc stands as a bastion of heroic winemaking in the Aosta Valley. As Mauro Jaccod, the cooperative's president, states, reinterpreting Saint-Exupéry: here, the essential is visible to the eyes. The Mont Blanc dominates the horizon, the Prié Blanc pergolas on ungrafted vines climb the stones up to over 1,200 meters, and the warmth of the slate intertwines with the intimacy of a unique landscape.

Founded in 1983, the winery's mission is to enhance the Prié Blanc, an indigenous grape variety grown in extreme conditions in the vineyards of Morgex and La Salle, between 900 and 1,200 meters in altitude. Here, the absence of phylloxera has allowed the survival of ungrafted vines, preserving a varietal purity that is now rare. Across 18 hectares of vineyards, Cave Mont Blanc promotes a model of viticulture that combines respect for local traditions with technological innovation, creating wines that tell the story of the harshness and beauty of this land.

Among its standout offerings is the unique Metodo Classico D.O.C. sparkling wine, the only one in the Aosta Valley, crafted through a blend of ancient sparkling techniques and modern enological practices. The Cuvée des Guides, produced in collaboration with the Alpine Guides of Courmayeur and the Funivie Sky Way Monte Bianco, is the winery's flagship. This exclusive sparkling wine is born at an altitude of 2,173 meters, at the Pavillon du Mont Fréty, merging Nordic traditions and Latin sensibilities into a perfect balance of freshness and complexity.

Since 1999, Cave Mont Blanc has been dedicated to the recovery and enhancement of Prié Blanc, with two labels made from grapes grown in the most extreme vineyards, between 1,000 and 1,200 meters. These unique wines are a tribute to the determination of a community that lives and breathes the mountains, turning challenges into an opportunity to create beauty and excellence.

The history of wine in Valle d'Aosta has ancient roots, dating back to Roman times. This mountainous region, located in the Western Alps, has cultivated vines for centuries, developing a unique and distinctive winemaking tradition.

Thanks to the terrain favorable to vine cultivation and the cool climate, Valle d'Aosta has important native grape varieties, typically mountainous, and produces highly appreciated wines for their freshness.

Among the most representative white grape varieties is the Prié Blanc (native), and the Petit Arvine among the traditional ones, while for native black grape varieties, the Petit Rouge, Fumin, Mayolet, Neyret, Cornalin, Premetta, and Vuillermin stand out.

Valle d'Aosta has only one DOC, divided into 7 territories: Arnad-Montjovet, Blanc de Morgex et de La Salle, Chambave, Donnas, Enfer d’Arvier, Nus, Torrette.

The wines of the Valle d'Aosta DOC are appreciated for their freshness, liveliness, and authenticity, characteristics that reflect the cool climate and unspoiled nature of the Alps.

Mont Blanc

The Valle d'Aosta DOC is identified with the flat valley floor where the Dora Baltea flows, where the vineyards have an exposure of one slope facing South and one facing North. The scarcity of suitable agricultural land has driven the populations of the Alpine arc to move towards the sunny slopes of the mountains, building imposing terraces for laborious and high-quality viticulture.

The DOC was recognized in 1971. Among the grape varieties suitable for the production of Valle d'Aosta DOC, 7 are native (Mayolet, Fumin, Cornalin, Petit rouge, Premetta, Vuillermin, and Prié blanc), 2 are traditional (Petite Arvine, Nebbiolo), while Moscato bianco has historically been cultivated in the Chambave area. Pergolas are still widespread under Mont Blanc, allowing the retention of heat from the ground and protection from snowfall.

The red wines of Valle d'Aosta DOC present typical fruity aromas of the grape varieties, which in the aged versions express themselves with spicy and balsamic notes. The white wines of Valle d'Aosta DOC express themselves with fruity sensations and important mineral notes, characteristic of loose and light soils. The strong temperature variation determines fragrances characterized by intense fruity and floral notes.
