Production and refinement

The harvest is carried out manually, ensuring careful grape selection. The grapes are destemmed and then subjected to cold maceration for 3-4 days, allowing the development of aromas.

Vinified with the Metodo Classico, fermentation occurs only with the cuvée, using spontaneous yeasts, in stainless steel tanks. The wine is separated from the lees before malolactic fermentation begins; refermentation in the bottle. The final dosage of sugars is 7 grams per liter.

It has a beautiful straw yellow color; fine and persistent perlage.

Olfactory examination

On the nose, it's characterized by delicate notes of white flowers, citrus, and brioche.

We are in Jura, a magical land.

Louis and Chloé, a young couple passionate about Poligny, a charming village in Jura, made a bold decision when they learned that Xavier Reverchon was about to retire. Without hesitation, they approached Xavier with the request to take over his estate and care for his vineyards.

The enthusiasm and love of the young couple for Jura wines won over Xavier, who, proud to see his estate revived with new vitality, agreed to support them with his invaluable experience.

Thus, Domaine La Croisée Comtoise, located in the picturesque hills of Jura, became the fruit of this collaboration. With a vineyard area of ​​6 hectares, it represents a blend of tradition and innovation, thanks to the enthusiasm, skills, and passion of Louis and Chloé combined with the consolidated experience of Xavier Reverchon.

Jura

Viticulture in Jura dates back to the Roman era. Once, the vineyards covered a much larger area, but after World War II, cultivation was scaled down, and today it comprises only 2,000 hectares, sustained by the determination of producers committed to preserving traditions. The winemaking landscape in Jura consists mainly of small family-run estates that use traditional production methods.

The vineyards in Jura are partly on flat terrain and partly on plateaus, but also at the foot of the foothill area known as "Revermont," where the rugged terrain necessitates good sun exposure through terracing, with vines covering slopes of over 40%.

The soils in Jura vary significantly depending on the area, but they are generally characterized by their poverty, which makes viticulture more challenging but yields wines of great character and personality.

The climate is influenced by the mountains and is generally cool and humid, with relatively high precipitation throughout the year. In Jura, a phenomenon called "retour d'est" often occurs, where air currents descending from the Alps bring moist currents to the vineyard-covered hills, causing sudden and violent downpours that can threaten production.

The designation of wines follows the French AOC (Appellation d'Origine Contrôlée) system, and to obtain recognition, producers must meet all production criteria and submit the final wine to a committee. Viticulture in Jura mainly focuses on white grapes, including Chardonnay, Savagnin, and Poulsard. Vin Jaune, one of the most famous wines, is made from Savagnin and follows a unique aging process, stored in partially filled oak barrels, resulting in an intense, dry wine with a distinctive nutty aroma.

The Côtes du Jura is the most significant designation in the region, encompassing over 70 municipalities. The predominant wines are whites based on Chardonnay and Savagnin, and reds from Pinot Noir, Trousseau (Bastard), and Poulsard.

Franche-Comté

The Franche-Comté is a region of stunning landscapes, characterized by a particularly varied geological morphology that gives local wines a strong connection to the soils and local terroir. The most famous wines of the region are Vin de Paille and Vin Jaune.

The cuisine of Franche-Comté is traditional and mainly relies on cheeses, cured meats, and local wines. Recipes tend to be quite hearty, as in these mountainous territories, farmers raised cows and pigs, producing homemade sausages and cheeses. Dishes were therefore based on these products, as vegetables were more challenging to cultivate in the mountains.

The Franche-Comté region is aesthetically stunning, characterized by a notably diverse geological morphology.
