NOTES FROM OUR SOMMELIERS

👁 of a beautiful straw yellow with golden reflections and fine and persistent perlage;

👃🏻 the nose is fruity and fragrant, with fruity notes of pear and peach, together with notes of hawthorn, orange blossom and hints of acacia;

👄 on the palate it is round, fresh, very elegant, with a finish that expresses itself on notes of dried fruit; in the final persistence.


PAIRINGS

This Cremant goes perfectly with fish and meat appetizers and is perfect with anchovies and sardine terrine. For a vegetarian solution, try it with fresh cheeses.

WINE-MAKING AND REFINEMENT

Grapes from clayey soils, harvested by hand when perfectly ripe, as per regulation, and placed in perforated boxes. Chenin blanc and chardonnay harvested and vinified separately, with soft pressing and vinification at a controlled temperature of 18° C. The ideal couvée is made for the second fermentation; bottled and left to re-ferment with the lees, to rest for at least 18 months.

ORIGIN

TERROIR

We are in the Loire, a region legendary for its wines and castles. In the Loire Valley we can speak of viticulture starting from the 5th century BC, thanks to the Romans who founded Paulica Villa, the current Pouilly-sur-Loire, and planted the first vineyards in Saumur and Sancerre. The climate is very varied: on the coast the temperatures are milder, the humidity is good but sometimes there are dangerous spring frosts, while as one moves inland the climate becomes more and more continental, with short summers and temperatures, colder winters and increasing temperature ranges.

The soils are also very different from one area to another: they range from granite mixed with sand in the Muscadet area, to red schists and slate in the Anjou area, to gravel and sand in Chinon. And above all to the chalk of Saumur and Vouvray, which gives wines rich in minerals, and to the clay and chalk of Sancerre and Pouilly. Here are grown vines such as melon de Bourgogne, sauvignon blanc, chenin blanc, chasselas, gros blanc, cabernet franc, gamay, grolleau and cabernet sauvignon.


WINERY

We are in Pouilly sur Loire, in the heart of one of the most suitable areas in the world for vines, on the left bank of the Loire. The Domaine has been making wine since 1790. This passion has been handed down from generation to generation, up to Laurent Saget who today takes care of the cellar, with wines of the highest quality.

The soil of the vineyards is mainly composed of clay and limestone, a unique combination which gives the wines both finesse and richness. The Domaine's philosophy is to intervene as little as possible in the vineyard and in the cellar, to make the wines express the most authentic characteristics of the vine and the territory.
