Production and refinement

Harvesting strictly by hand: the grapes are placed in small open crates to preserve the intact berries.

Pneumatic press and natural cold settling for 24 hours. First fermentation, including malolactic fermentation. Bottling and double fermentation in the bottle, with aging on the lees for a minimum of 18 months, maintained between 12 and 15 degrees Celsius.

Domaine Perraud

Domaine Perraud is located in the village of La-Roche-Vineuse, not far from the famous cliff of Solutré. We are in the Mâconnais, in the southern part of Burgundy, when, in 2005, Jean Christophe, at only 24 years old, managed to fulfill his childhood dream by establishing the Domaine on the family's land, which had been in their possession for four generations.

We are facing a production reality where every operation is carried out with the aim of producing quality wines. Among the rows, which cover 24 hectares, both white and red grape varieties are cultivated, including Aligoté, Chardonnay, Gamay, and Pinot Noir.

Domaine Perraud

The vines sink their roots into a mainly clayey and limestone subsoil, which extends for several kilometers, involving different designations. Among the rows, chemical treatments are kept to a minimum, cultivated under organic regime. And minimal are also the operations in the cellar. The great variety of terroirs that develop from parcel to parcel allows the Domaine to offer a wide selection of wines, able to satisfy even the most demanding palates.

Burgundy

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Mâconnais

In Burgundy, further south of the Côte Chalonnaise, in the Mâconnais region, mainly white wines are produced, predominantly from Chardonnay grapes. Pinot Noir and Gamay are cultivated to a lesser extent.

The best wines of Mâconnais come from the villages of Mâcon, Pouilly-Fuissé, and Saint-Véran. Mâconnais accounts for 1/4 of the region's production and is known for the excellent quality-to-price ratio of its bottles.

In Mâconnais, there is also a small village called Chardonnay, just like the grape variety, although it is not certain whether the grape was named after the village or vice versa, in honor of the white grape that became the most famous in the world.
