NOTES FROM OUR SOMMELIERS

👁 bright straw yellow, fine peralge;

👃🏻 the nose expresses itself intensely on fruity aromas, especially with yellow and floral fruit; and then yeast, bread crust and mineral sensations;

👄 on the palate it is definitely fresh and crunchy, with an excellent structure, elegant and characterized by a pleasantly mineral finish.


PAIRINGS

This white is a wine with great character and for this reason it is not afraid of aromatic dishes. To be combined with cured meats, salmon or tuna. For a territorial pairing, try it with choucroute d'Alsace.

WINE-MAKING AND REFINEMENT

Grapes that grow on soils characterized by limestone mixed with clay, harvested by hand after careful selection of the bunches.
Spontaneous fermentation with indigenous yeasts. A second refermentation in the bottle follows with the addition of fresh must to the base wine. Second fermentation with the following year's must: 36 months on the lees. No added sulfur.

ORIGIN

TERROIR

We are in Alsace, land of exceptional wines. Here, the cultivation of vines was introduced by the Romans and its development increased in the following centuries. The production of Alsatian wines experienced two phases of decline, linked both to the Thirty Years War and to the invasion of phylloxera, two centuries later. The climate is continental, with dry and sunny autumns which allow the maximum concentration of sugar and aromatic substances inside the grapes and the harvesting of the grapes in full phenolic ripeness.

Furthermore, the bunches can also be harvested in a late harvest, when the Botrytis Cinerea has carried out its admirable action and enriched the berries with everything that will give life to unique, incredibly perfumed wines: the Sélection de Grains Nobles.

Another peculiarity of this territory is the sudden variability of the soils: an alternation of granite and limestone, with a myriad of solutions in which clay, schist and chalk intervene, capable of offering the vines much more subtle and intense odorous nuances, fruity and mineral. Riesling, gewürztraminer, muscat d'Alsace, pinot gris and pinot blanc are grown here.


WINERY

The modern history of the winery begins in 1996, when Vincent Fleith takes over the vineyards of his family's historic estate, active since the seventeenth century, while the first live product on his own belongs to his grandfather. In the 9 hectares of his property, Vincent soon chose to produce in an organic and biodynamic regime, Demeter certified since 2008.

This means: great care in the vineyard to bring only healthy grapes to the cellar, with minimal human intervention; excellent representation of the characteristics of the grapes; use of only indigenous yeasts, no added sulfur and natural stabilization.

Vincent works to "keep the minerality and character of the Alsatian terroirs in the wines", as he himself says.

His vineyards benefit from climatic and geological conditions particularly favorable to the development of great wines. The Vosges form a natural barrier that protects against oceanic influences. There is little rainfall, harsh winters, hot summers, for products of great character and very high quality.
