Production and refinement

Fermentation takes place in stainless steel at controlled temperature; the second fermentation occurs in the bottle according to the Traditional Method, followed by a long aging on the lees in the bottle of at least 30 months (up to 96) without disgorgement, with zero dosage (Brut Nature). The extended aging gives this sparkling wine a fine and persistent perlage and a highly elegant aromatic complexity.

The grapes, hand-harvested from old estate vineyards located in the "Serral del Vell" vineyard on limestone soils, are cultivated according to the strict principles of biodynamic and organic farming, without the use of chemical insecticides or herbicides, promoting biodiversity and natural integration within the landscape.

Recaredo

Recaredo is a winery located in Penedès, Catalunya, founded in 1924. Since 2006, it has practiced biodynamic and organic farming certified by Demeter, eliminating chemical fertilizers, herbicides, and synthetic pesticides. The vineyard covers about 50 hectares spread across various parcels, with limestone-rich soils abundant in minerals, particularly in the "Serral del Vell" cru.

Harvesting is done manually to preserve grape quality, sourced exclusively from old estate vineyards. Vinification involves fermentation in stainless steel at controlled temperatures and long aging on the lees in the bottle, up to 96 months. The disgorgement is done manually without freezing the neck, and the dosage is minimal or zero (brut nature/dosage zero).

Recaredo

Recaredo is part of Corpinnat, an association of producers promoting high-quality organic sparkling wines with a strong connection to their territory and without mass distribution.

Penedès

Il Penedès è una delle principali aree vitivinicole della Catalogna, situata tra Barcellona e Tarragona. La sua posizione geografica lo rende un territorio unico, con un’influenza diretta del Mar Mediterraneo e della Cordigliera Prelitorale catalana. La regione si articola in tre sottozone distinte per altitudine: il Baix Penedès (pianura), l’Alt Penedès (collina) e il Penedès Superior (zone più elevate), dove si trovano i vigneti più freschi e vocati. I suoli sono prevalentemente calcareo-argillosi, ben drenanti, con presenza di marne e sabbie. Il clima è mediterraneo, con estati calde, inverni miti e una buona escursione termica nelle aree collinari, ideale per preservare acidità e profumi nelle uve.

La viticoltura del Penedès si distingue per l’adozione crescente di pratiche biologiche e biodinamiche, con un’attenzione marcata alla sostenibilità. I vitigni più rappresentativi sono gli autoctoni Xarel·lo, Macabeo e Parellada per le uve bianche, Trepat e Sumoll per le rosse, affiancati da varietà internazionali come Chardonnay, Pinot Noir, Cabernet Sauvignon, Merlot e Syrah. Storicamente riconosciuto come la culla del Cava, oggi il Penedès è protagonista di un rinnovamento centrato sulla produzione di spumanti Metodo Classico di altissima qualità, come i Corpinnat, frutto di rigorose selezioni manuali, vinificazioni interne e lunghissimi affinamenti sui lieviti.

Accanto alla spumantizzazione, si registra una crescente attenzione per i vini fermi, in particolare per quelli da Xarel·lo in purezza, capaci di restituire un’espressione autentica del territorio e di evolvere positivamente nel tempo. Il Penedès si presenta quindi come un territorio tecnicamente evoluto ma radicato nella tradizione, riferimento europeo per chi cerca spumanti gastronomici, di territorio, ottenuti con metodi artigianali e prodotti in quantità limitate.

Catalunya

Catalonia has a long-standing tradition linked to Cava, created in 1850, and has established itself as a leader in quality wine production, particularly sparkling wine. Today, it is the second-largest wine-producing region in Spain, with over 5.5 million hectoliters produced.

The climate is Mediterranean, warm, and arid inland, with predominantly sedimentary and calcareous soils. The key grape varieties include Macabeu, Parellada, and Xarel·lo for Cava, and Garnacha, Monastrell, and Tempranillo for red wines.

The 10 Catalan DOPs (Denominaciones de Origen Protegidas) include Priorat, the only DOQ, and the Catalunya DOP covering the entire region. The main wine regions are:
