FOOD PAIRINGS

Colle dei Marmi is a very fragrant, complex wine with great drinkability and balance. It prefers aromatic and fairly intense dishes. Perfect to accompany seafood dishes, it is excellent with linguine with cicadas.

WINE-MAKING AND REFINEMENT

Although not very widespread, Fiano in Latium has very ancient origins, especially in the Castelli Romani area, and it is from Fiano grapes processed in purity that 'Colle dei Marmi', a white wine from Latium produced by the 'Le Rose' winery, is made. Fermented at a controlled temperature, it then rests twelve months on the lees, partly in cement vats and partly in large wooden barrels.

ORIGIN

TERROIR

We are in the Castelli Romani area. Viticulture has very ancient origins here: already in Roman times, production was vast and developing, so much so that in the 1st century BC Domitian was forced to limit the introduction of new plantings to prevent the cultivation of wheat from being sidelined. The hills are largely of volcanic origin and the numerous small lakes, craters of volcanoes that are now extinct, are clear evidence of this. The soils are also volcanic with arenaceous, clayey and marly sediments that give the wines a good aromatic bouquet and excellent structure.

WINERY

The company was founded in 2003 in the small town of Genzano di Roma, with a simple and decisive conviction: to bring the quality of a territory into the bottle, without upsetting the rhythms of nature and the vine. Located in the countryside of Velletri, 480 metres above sea level, among the hills of the Castelli Romani, the company aims to promote the native and historical vines of the area, without disdaining the grafting of new vines. Family-run, all the work is done on the farm with passion, sweat and dedication, in an organic agronomic regime, following a green policy in the vineyard and in the cellar. They try to combine tradition and innovation in the best possible way.
Processing and production, from berry to bottle, are followed at 360° with the aim of quality, using technology while respecting the earth. Cultivation, in fact, takes place under a green and organic regime: from agronomic treatments with seaweed extracts in the vineyard to the use of photovoltaics, from special pruning that helps the vines to defend themselves to the choice of the lowest possible impact of bottles and packaging. The company works the land with great care: the grubber, which penetrates deeply, moves the earth and cuts the superficial roots of the vines, while the spade loosens and softens the soil.
A small plough is then passed between the vines twice a year to remove weeds and tamp down the earth around the plant to give it protection from heat peaks. Just as much care is taken during the harvest and in the cellar, to create the eight labels. Delicate but rich wines, recognisable and never aggressive. The quest for quality is truly the guiding star of everything they do.
