NOTES FROM OUR SOMMELIERS

👁 light straw yellow;

👃🏻 the nose expresses hints of citrus fruits (grapefruit above all), white pepper and light traces of aromatic herbs integrated with a good mineral note;

👄 the sip is dynamic and very fresh.


RECOMMENDED COMBINATION

An elegant bubble, ideal in combination with appetizers and seafood first courses, especially if containing crustaceans and molluscs; also perfect with cured meats and medium-structured cheeses. But a glass should be tasted alone.


REFINEMENT

Manual harvest in boxes with selection of the best bunches in the vineyard. Maceration on the skins for 48 hours, fermentation at a controlled temperature with indigenous yeasts, in stainless steel tanks for 6 months before second fermentation and then at least 80 months on the yeasts according to the Classic Method.

TERRITORY OF ORIGIN

TERROR

We are in the Trento DOC area, home of renowned bubbles, which stands out for elegant wines that express a unique concept of territoriality. The success and particularity of Trento DOC sparkling wine is due precisely to the characteristics of the territory: the combination of climate, different altitudes, soils and Trentino savoir faire make Trento DOC not a simple sparkling wine, but a highly prized mountain sparkling wine, increasingly recognized and awarded. The Trentino area, although small, is covered by 10,000 hectares of vines with a percentage of grapes destined for the production of sparkling wine equal to 8% and a total production of 7 million bottles per year.

The area, as well as for its Trento DOC bubbles, is famous for its elegant white wines, typical of high altitude territories. Here altitude plays a fundamental role in the quality of the wine in the glass. The vineyards are located at an altitude between 200 and 900 meters above sea level, in an environment with climates characterized by strong daily temperature variations capable of giving the grapes aromatic complexity, elegance and freshness. Furthermore, the drainage and aeration conditions of the Trentino soil give the wine greater tasting complexity.

The vines can enjoy different climates here: we go from a mountain microclimate to the milder one of Garda. Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties grown for Trento DOC sparkling wine are chardonnay and pinot noir. The surface area of ​​organic vineyards in Trentino is continually increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards the healthiness of their products.


CELLAR

Alfio Nicolodi is a passionate promoter of Val di Cembra viticulture and mountain winemaking in a broader sense.

Here we are talking about true heroic viticulture. The prohibitive slopes and the terrain are so rough that cars can rarely be used: winemakers like Alfio literally have to climb up them. This is why in this area the most evocative symbol of viticulture is fatigue, which in the past was also linked to poverty. The company was founded by his grandfather at the beginning of the twentieth century but the turning point was due to Alfio, who changed the systems and winemaking in less than 2 hectares of vineyards, carefully following the entire production phase.

With enthusiasm and great stubbornness, Alfio has recovered two rare vines from the Valley for production: Lagarino Bianco and Veltliner Rosso.
