NOTES FROM OUR SOMMELIERS


👁 of a beautiful intense ruby ​​red with violet reflections;

👃🏻 the nose is fruity, broad and complex, with notes of berries, plum and dried figs together with delicate hints of sweet spices and marzipan;

👄 a the palate shows a good tannin supported by an important alcohol concentration. Robust, complex wine, which expresses the most authentic characteristics of the vine.


RECOMMENDED COMBINATION

This Primitivo has an important structure and therefore requires dishes that can enhance it. Its grandeur suggests pairings with structured first courses, roasts, braised meats and medium-long matured cheeses.


REFINEMENT

Produced in the Manduria countryside from 20-year-old vines trained on the Apulian sapling. Grapes harvested by hand, macerated for 7-8 days in traditional vitrified "ferments" with the start of fermentation using indigenous yeasts; subsequent inoculation of selected yeasts. Racking off, completion of alcoholic fermentation and aging in underground cement wine vessels; following the traditional production process typical of the "palmenti". Evolution for 4 months in the bottle before being released for consumption.

TERRITORY OF ORIGIN:

TERROR

We are in Salento, in the southernmost area of ​​Puglia . The ancient Land of Otranto, famous for its thousand-year history closely linked to the Mediterranean Sea which bathes it. Salento is one of the regions in Italy where the winemaking tradition has distant roots , as quality wine has been produced here for 3000 years. The warm climate and diversity of soils are ideal places for growing vines. The main vines are: Negroamaro and Primitivo. Negroamaro is a full-bodied red wine, with a full structure and a brilliant colour. On the nose it has a strong but at the same time fruity aroma, with a slightly bitter and rounded taste. These characteristics are conferred by the grape variety : Negroamaro has rather large grapes, very dark in color and with sweet, juicy pulp. The harvest is quite late and the bottle aging is rapid (from 6 to 12 months). The past used for the production of numerous wines, in recent years there is a growing trend towards its vinification in purity, increasingly appreciated for its elegance.


CELLAR

Antico Palmento is a family-run business in the center of Manduria . It was born from the passion of Bruno Garofano who, after forty years of collaboration and oenological consultancy for various Apulian wineries, decided to make his experience available to his children Gabriele and Mariangela and started a wine business in the heart of one of the most suitable areas of Puglia. The objective is to produce wines in limited quantities that interpret the best expression of the territory: for this reason it focuses heavily on native wines . Attention is focused on primitivo, the main grape variety of this area.

Bruno's dream came true in 1998 with the acquisition of a few hectares of vineyard and a " palmento " (a tank for the fermentation of must) dating back to the early years of the last century. The entire production chain takes place in the structure returned to work after a careful renovation. Given its historical origin and its location in the center of Manduria - among very narrow streets - we can truly speak of heroic winemaking !
