Production and refinement

From the Premier Cru Morgeot vineyard, Chassagne-Montrachet. After rigorous selection in the vineyard, the Chardonnay grapes are transported to the cellar, where they are whole-pressed using a pneumatic press.

After natural cold settling for 24 hours in temperature-controlled vats, the grape must ferments at a low temperature in new or one-year-old barrels at a controlled temperature of 16°C. It ages for 12-14 months, including 8-10 months in new oak barrels for 30% of the time.

Domaine Capuano-Ferreri

Domaine Capuano-Ferreri, located in Santenay, a locality in Burgundy situated between the Côte de Beaune and the Côte Chalonnaise, spans 14 hectares of vineyards. Here, Pinot Noir and Chardonnay are the stars, cultivated in the most renowned Crus of the region. The position of the vineyards, the rigorous work in the field, and traditional techniques in the cellar are the foundations for producing quality wines with a strong sense of terroir.

The winery was founded in 1987 from the partnership between winemaker Gino Capuano and former soccer player Jean-Marc Ferreri. Domaine Capuano-Ferreri's priority is to let the different terroirs express themselves through the prestigious Burgundy appellations. The excellent exposure of the vineyards, meticulous work in the field, manual harvest, and careful grape selection allow for the production of high-quality wines.

Domaine Capuano-Ferreri

The work in the vineyard is mainly manual. After the harvest, in November and December, the long pre-pruning work begins, which involves cutting the shoots. The burning of the cut shoots completes the vineyard landscape during the winter. From the Feast of Saint Vincent on January 22 until mid-March, the final pruning is carried out, regulating the amount of grapes to achieve the best quality wine. In the end, only one shoot will remain on each vine stock, tied to a wire. The vines are fully tended. Hoeing and passing between the vines to remove weeds are done regularly. Starting in May, when the vines begin to grow, leaf thinning, trellising, and tying are performed. In summer, leaf thinning is done to maximize aeration of the clusters: a primary barrier against diseases.

From mid-September, the harvest season arrives, lasting about ten days. Thanks to rigorous selection, only healthy and ripe clusters are kept and brought to the crusher. It is an intense period during which the entire team works in the vineyards and the cellar to contribute to the success of the new vintage.

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Côte-d'Or

Côte d’Or stretches from Dijon to Santenay: it is the most prestigious area of Burgundy, where wines classified as Bourgogne Premier Cru and Bourgogne Grand Cru are produced. It is divided into two sub-regions: Côte de Nuits to the north is famous for its red wines from Pinot Noir and white wines from Chardonnay; Côte de Beaune to the south is renowned mainly for its excellent white wines. Both sub-regions are divided into various villages, each with their own designations, with the Grand Crus representing the pinnacle of quality.

The Côte de Nuits Villages and Hautes-Côtes de Nuits offer wines of excellent quality; in Côte de Beaune, Grand Crus such as Montrachet and Corton-Charlemagne are among the most renowned. The Côte de Beaune Villages and Hautes-Côtes de Beaune designations are characterized by higher altitudes and lesser exposures.
