NOTES FROM OUR SOMMELIERS

👁 a beautiful straw yellow intense, with a fine and persistent perlage ;

👃🏻 the nose expresses itself on notes of citrus fruits, yeasts and bread crust, with light notes of vanilla and almond blossom;

👄 on the palate it is fresh and round, demonstrating excellent balance. Definitely elegant.

An elegant Classic Method that needs to be paired with equally refined dishes. Perfect with fish, even raw, seafood and sushi.


REFINEMENT

Obtained from Chardonnay grapes (with a small percentage of Pinot Noir) grown in a plot with a strong clay-limestone presence, from vines over 30 years old. Grapes harvested by hand and softly pressed whole, without being destemmed. The flower of the must ferments in steel containers at a temperature between 15 and 18° C. Second fermentation in the bottle in a fifteenth-century cellar with perfect humidity and a constant temperature of 15 degrees. Here he rested for 33 months. The cleaning of the fermentation grounds is also done manually.

TERRITORY OF ORIGIN

TERROR

The production of wine in the Piacentini hills has a historical tradition documented since Roman times, and of quality. All the local viticulture is located in a particularly suitable hilly area considering the exposure and characteristics of the land which in any case does not exceed 500 meters above sea level.

The Colli Piacentini DOC wines have characteristics that can be divided into two macro categories. Red wines are characterized by higher alcohol content and structure. The good fertility of the soils of the Piacenza hills determines grapes with a high malic acid content, making them particularly suitable for the production of sparkling wines, which today constitute the largest production in the area.

CELLAR

The company is located in Ziano Piacentino, in the western end of Emilia Romagna, between Piacenza and Pavia, in the Fornello area. The name of the company derives from the presence of furnaces present in the company premises since the thirteenth century.

Enrico has decided to pay particular attention to environmental sustainability and to increasingly less invasive human intervention, in the vineyard and in the cellar. An essential element is territoriality: all its wines must fully reflect the terroir
of the Piacentini Hills, without interventions that could alter the aromas or perfumes. The grapes produced are all grown organically.

For all these reasons, the wines of Torre Fornello are a frank expression of the Piacenza area, wines with great personality, complex and elegant.
