NOTES BY OUR SOMMELIERS

👁 of a beautiful and deep pale yellow;

👃🏻 on the nose it expresses a fruity bouquet (apple and apricot), bewitches with citrus scents, while the finish is vanilla;

👄 on the palate it is round and fresh. Excelletn correspondance between nose and mouth, as well as the acidity.

FOOD PAIRINGS

An unmistakable and versatile Chardonnay of Burgundy. Thanks to its olfactory flavor intensity it can be paired well with soft cheeses, salmon, tuna or seafood.

WINE-MAKING AND REFINEMENT

A 100% Chardonnay grown in the Chalonnaise vineyards and harvested by hand. The crushing-destemming is soft and the alcoholic fermentation is carried out at a controlled temperature in steel tanks. A brief refinement in steel follows, to guarantee and preserve the quality of the grapes.

ORIGIN

TERROIR

We are in one of the most suitable areas in the world: Burgundy. A unique and evocative territory, capable of giving extraordinary wines. The soil and climatic conditions of Burgundy, combined with a special savoir-faire of the vignerons, due to centuries of quality agronomic practices, determine a unique terroir. In this region, the care and specificity arrive at the definition of "climat", protected by UNESCO.
The vineyards of Burgundy stretch for about 250 km between Chablis in the north and Mâconnais in the south, bordering the Rhone valley. The climate is mainly continental, with slight maritime influences in the western area up to Dijon and Mediterranean in the southernmost one. Winters are cold, frosts quite frequent, sometimes even in spring; rainfall is minimal during the budding period but intense between May and June, and this can compromise flowering and therefore the harvest. The soil of Burgundy is made up of marine sediments mixed with limestone, marl and clay, with a prevalence of limestone in the Côte, from Dijon to Chagny. The territory is divided into these large sub-regions: Auxerrois, Chablis to the north in the Yonne, then Côte-d'Or, Chalonnais and Mâconnais and Beaujolais. In Chablis and Auxerrois limestone-marl soils prevail, in the Côte d'Or the richest limestone soil allows pinot noir to express all its class, while in the southern area clay and marl give great elegance to the Chardonnay. In Chalonnais and Chalonnais limestone, marl and clay reign, while in Beaujolais the soil is calcareous, schist and clayey.

WINERY

After the sale of the family property in Volnay, following the death of his father in 1997, Nicolas Potel began his business as a négociant using the old cellars of the Nuits Saint Georges station as caves. The international reputation that Nicolas Potel has built over the years by making wine from the most important parcels in the region is indisputable.
In 2005 he created the Domaine de Bellene and the négoce Maison Roche de Bellene, located in a 16th century building in the heart of Beaune: to all intents and purposes a 100% organic maison in the capital of Burgundy wines. The vineyards owned by the Domaine de Bellene, totaling about twenty hectares, extend from Santenay to Vosne Romanée; only vielles vignes from 50 to 110 years old.
A mass selection is made from the best ones to return the best of each parcel. The cultivation takes place according to the organic disciplinary and the vinification strictly follows the biodynamic calendar in all its phases. Nicolas Potel's wines are recognized for their ability to offer the purity of the fruit.

Per un fresco antipasto

Ho apprezzato questo vino durante alcuni antipasti di pesce. Un ottimo vino da chiacchiere, per iniziare il pasto più importante.
