FOOD PAIRINGS

This Metodo Classico Blanc de Blanc prefers light, fresh dishes with a Mediterranean flavour. It is therefore perfect with fish dishes.


WINE-MAKING AND REFINEMENT

The chardonnay is immediately pressed, producing the base for the Metodo Classico sparkling wine, and the draught takes place in the spring following the harvest. The wine then remains in the bottle for at least 30 months in contact with the re-fermentation yeasts, with continuous remouage until disgorgement. Zero added sugar.

ORIGIN

TERROIR

The winery is located in Diano d'Alba, in the heart of the Langhe, a 2014 Unesco heritage site. It is a land of ancient wine-growing traditions, where wine was already known before the arrival of the Romans. The empire brought great contributions to viticulture, for example by deforesting a large part of the Langhe, which was then covered by thick forest. The Langhe are subdivided into Alta and Bassa Langa: the latter lies to the north between the Tanaro and Belbo rivers and is recognised the world over for prestigious wines such as Barolo and Barbaresco as well as Pelaverga, Dolcetto d'Alba and di Dogliani and Nebbiolo and Barbera.
The Alta Langa, on the other hand, is located further south and has steeper hills reaching up to 750 metres above sea level; Alta Langa, Moscato and Barbera and the rare Timorasso are produced here. In particular, Alta Langa, thanks to the cultivation of chardonnay and pinot noir, has managed over the years to produce classic method and charmat sparkling wines renowned on the national and international scene. The soils of the Langhe are composed of clayey-calcareous sedimentary marls, interspersed with layers of more or less important grey-blue marls, an important characteristic for producing both full-bodied red wines and fresh, fragrant bubbles. The Langhe area is characterised by a temperate continental climate, with the peak of rainfall generally fixed during the month of May.


WINERY

The history of the Bricco Maiolica winery began in 1928, when Bernardo Accomo, known as Cumot, bought the first 5 hectares of land, Bricco Maiolica in fact, in the territory of Diano d'Alba, in the Langhe. Initially, the vineyards were all dolcetto; the barbera grapes were planted a couple of years later in a plot called Vigna Vigia.
Giuseppe, grandfather of the current oenologist Beppe Accomo, decided to cultivate nebbiolo grapes as well, while it was Angelo (Beppe's father) who introduced the white grape varieties. The company currently has 24 hectares of vineyards, characterised by low yields and great attention to maintaining the natural balance of the environment: Bricco Maiolica uses neither fungicides nor anti-mould in the vineyards.
Twelve wines are produced by the winery: among the reds, the classic Piedmontese Dolcetto di Diano d'Alba, Barbera d'Alba and Langhe Nebbiolo; the outstanding Barbera d'Alba Superiore Vigna Vigia and Nebbiolo d'Alba Superiore Cumot. The whites are also of great interest.
