Production and refinement

From vineyards pruned using classic Champagne methods, with the Chablis system for Chardonnay and Cordon de Royat for Pinot Noir, rooted in soils composed of a blend of chalk, marl, and limestone. Hand-harvested.

Soft pressing and vinification for six months in stainless steel tanks, with 100% of the mass undergoing malolactic fermentation. Aged for 6 years on its lees and an additional 6 years after disgorgement.

Olfactory examination

On the nose, it enchants with aromas of ripe apple, brioche, and peach, with subtle hints of brioche. Its distinctive fruity character is what makes it so special.

Tasting

On the palate, it envelops with a pleasant sensation of softness, while maintaining freshness throughout. The brioche and peach notes perceived on the nose return, accompanied by hints of minerality.

With 160 years of family history in Champagne behind her, Virginie’s destiny seemed already determined. Daughter of Claude Taittinger, former president of Champagne Taittinger, and Catherine de Suarez d’Aulan, former owner of Champagne Piper-Heidsieck, Virginie left the Maison in 2006 after 21 years of work to establish her own brand: Virginie T.

Champagne

The vineyards of Champagne, stretching 150 km east of Paris, challenge the extreme conditions of the northern climate. Situated at the 49th parallel north, the grapes are cultivated with the help of the ocean's influence, which moderates the temperatures, and the extraordinary skills of the vignerons.

Average temperatures, just above 10°C, promote the slow ripening of the grapes, preserving their natural acidity. Despite the humid climate and frequent spring frosts, the region produces ideal grapes for Champagne, thanks to soils rich in chalk and other mineral components. The vineyards, spread over diverse terrains, extend across hills and plains, capturing the essence of the Mistral wind and the few hours of available sunlight.

Montagne de Reims

In the Montagne de Reims, we find a subsoil of chalk with layers of clay and lignite. Here, Pinot Noir expresses all its power in freshness, releasing scents of extraordinary elegance, with notes of currant and spices. Numerous houses, including Roederer, draw from these soils to create prestigious cuvées and vintage champagnes of great value, maintaining a centuries-old tradition in sparkling wine production.
