Domaine Seguinot

In the heart of Burgundy, the prestigious wine-growing region of Chablis has been a symbol of excellence for centuries, with roots tracing back to Roman times. It is here, on chalky soils that impart a distinctive mineral character to the wine, that Domaine Séguinot began its journey in 1971. Founded by Daniel, the Domaine came to life with the acquisition of parcels in two renowned Chablis Premier Crus: Fourchaume and Homme Mort. Management of the Domaine passed to his daughters Emilie and Laurence in 2003 and 2008, respectively, who have expanded the estate to its current 20 hectares of vineyards, continually pursuing quality and honoring tradition.

The terroir of Chablis is unique. The cold temperatures and chalky soil contribute to the Domaine Séguinot wines' characteristic mineral notes and unmistakable freshness. Located in the commune of Maligny, the Domaine enjoys a privileged exposure on the right bank of the Serein River, which enhances the ripening of Chardonnay, the only grape variety cultivated.

The wine range of Domaine Séguinot comprises five labels, spanning from the more structured and complex expressions of the Premier Crus Fourchaume and Homme Mort, and the Vieilles Vignes, to the fresher and more immediate styles of Petit Chablis and Chablis.

Each bottle represents a symphony of precision, balance, and character, reflecting the harmony between vineyard care and craftsmanship in the cellar. The result is elegant, authentic, and versatile wines, ideal for complementing gastronomy and providing unique sensory experiences for the most discerning enthusiasts.

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Chablis

This area is located about 180 kilometers south of Paris and just 40 kilometers south of Champagne. The climate is continental, with cold winters and springs, and risks of spring frosts.

In Chablis, only white wines from Chardonnay grapes are produced. These wines are fresh and often characterized by mineral notes, with hints of flint derived from the characteristics of the soils. Chablis wines are generally fermented and matured in steel tanks, a technique that makes them very distinctive and different from the Chardonnays of central Burgundy, which instead have toasted and vanilla notes.

Baked trout is a simple and tasty main course that can be enriched with cherry tomatoes, olives, capers, aromatic herbs, and served with seasonal vegetables that enhance the delicate flavor and lovely aromas of the fish.
