FOOD PAIRINGS

A wine with personality, persistent, which pairs very well with full-bodied food. We recommend it with cold cuts and salami, savory first courses, risottos, roasts, grilled red meats and aged cheeses. Open it 15 minutes before serving.


WINE-MAKING AND REFINEMENT

Wine produced on a volcanic soil, that of the Castelli Romani, well exposed and ventilated. The vineyards are trained using the Guyot system with a density of 4,500 plants per hectare. The harvest is manual, and only takes place when the right ripeness is reached, a careful selection of the grapes is made, followed by a light drying. Maturation in steel for 4 months, aging in barrique for 12 months, 6 months of refinement in the bottle.

TERROIR

The winery is located in the hilly area of ​​Frascati, where the Romans have practically always produced wine: the ancients appreciated the wine of Tusculum, the hill above Frascati, a natural terrace overlooking the capital.The soils are characterized by volcanic origin, a fact that gives the wines flavor and minerality, as well as a very high quality.

The grapes of the area are above all Malvasia di Candia, Malvasia del Lazio, Tuscan Trebbiano, green and yellow for white wines; Cesanese, Merlot, Montepulciano and Sangiovese for the reds.

 

WINERY

A young and very dynamic farm, which strongly believes in innovation, always maintaining strong links with local culture and traditions; was founded in 1986, and is the result of the meeting between an expert Apulian winemaker, Umberto Notarnicola, and a Piedmontese wine expert, Bruno Violo, in love with the Lazio landscape.

The hills where the Frascati vineyards grow are of volcanic origin, rich in mineral salts (potassium, phosphorus, calcium and magnesium) and poor in nitrogen. An ideal combination for the cultivation of vines and the production of wines of very high quality.
