FOOD PAIRINGS
A balanced and persistent wine. Favours dishes with succulence and intensity. Perfect to accompany traditional Tuscan dishes, cold meats and strong first courses with pork or game ragout, main courses of red meat but also rabbit and lamb, light to medium mature cheeses.
WINE-MAKING AND REFINEMENT
This great Sangiovese comes from the vineyards of Montagnana and Palagione. After manual harvesting and soft crushing and destemming, alcoholic fermentation follows at a temperature of around 28/30° with frequent and delicate pumping over and finally maceration on the skins for around 15/20 days in small, wide and low stainless steel tanks so as to favour greater contact and consequent better extraction of both tannins and colouring substances. After the malolactic fermentation, carried out in steel, the wine is aged for 12 months in barriques and at least 3 months in the bottle.

TERROIR
The municipality of San Gimignano has an area of 12,500 hectares, of which 5,600 are given over to agricultural production (vines, olives, cereals). The territory of San Gimignano is an area characterised by a Mediterranean climate with rather dry summers, not particularly harsh winters and rainfall concentrated in spring and autumn. The area benefits from good ventilation at all times of the year, and episodes of fog are rare. The soils used for wine production are those formed on Pliocene marine deposits and made up of yellow sands (tuff) and yellow clays that are, in turn, often stratified on more compact, deep clays.
These are soils strongly characterised by the presence of sand and almost devoid of skeleton, favourable to the penetration of plant roots. They are generally poor in organic substance and thanks to the sand they are well drained. It is precisely the tuff that gives the wines great sapidity.
The hills of San Gimignano have varying exposures, altitudes, soil compositions and water availability. The multiple combinations of these individual factors determine, even in such a restricted area, a significant impact on the character of the wines produced there, emphasising, depending on the case, the fruity or mineral characters or the savoury taste. The San Gimignano area is highly suited to wine production.
WINERY
Il Palagione is an ancient late 16th-century estate purchased in the 1990s by Giorgio and Manuela with the desire to devote themselves to the rebirth of this important San Gimignano wine-growing area. We are in an area whose soils are dominated by clay and pebbles as well as shells, a reminder that this area was once a seabed. The vineyards are exposed to full sun and gently grassed to leave moisture in the soil. The main varieties grown are Vernaccia and Sangiovese. In particular, the vernaccia grapes are harvested by hand and vinified separately for each vineyard in order to obtain the best expression of the terroir for that vintage.
