👃🏻the aroma of red fruits emerges on the nose, dominated by the seductive bouquet of fresh blackcurrants, plums and other dark forest fruits;

👄 the taste still expresses a hint of raspberry and dark cherry. A wine with soft tannins and an interesting, long aftertaste;

Cabernet Sauvignon is an intense, complex and persistent wine.
It favours succulent dishes.
The wine is recommended with all types of red meat. It also goes well with mature cheese and slightly spicy vegetarian food.

 
REFINEMENT

This pure Cabernet Sauvignon is grown in the hills of the Vipava Valley: the variety of soils results in great complexity and quality in the glass.
It undergoes a 7-day maceration before alcoholic fermentation at a controlled temperature, then matures 18 months in oak barrels.

TERROIR

This is the Vipava Valley in Slovenia, which produces exceptional whites and reds.
Elegant and harmonious, they are characterised by a rich bouquet, freshness, fruity aromas and smoothness. The characters of these wines reveal an unmistakable trace of historic winemaking tradition, infused with a dash of contemporary approach from the younger generation.
Natural agriculture
is a cornerstone of the region: its most progressive winegrowers produce wines from organic grapes and often according to biodynamic principles.
 The Vipava Valley wine district is best known for its white grape varieties and the high-quality white grape blend called Vipavec.
The most important white
wine is the yellow ribolla, which also has the longest tradition. Popular varieties here include sauvignon blanc, malvasia, welschriesling, chardonnay and pinot blanc.
A special place among the white varieties belongs to the autochthonous zelen, whose producers are united in the Zelen Consortium. Some vineyards also grow pinot gris, muscat blanc, petit grains and sauvignonasse. Red wines are not so common in the Vipava Valley, but they achieve surprising results. The predominant variety is merlot, in the valley an essential base for superior red blends, while most wineries also have cabernet sauvignon.


WINERY

The key to delicious wines and success lies in the vision and work of the Žorž generations. In recent years, wine production has been passed on to the younger generation, which is looking for new opportunities in the combination of their professional knowledge and experience of their fathers. In 2015, the Žorž winery also became organic, which shows that the company is following new and better trends in wine production in the region. With wine production covering an area of almost 12 hectares, the Žorž farm is one of the largest in the Vipava Valley. The vineyards are planted with red grape varieties, such as merlot, cabernet sauvignon and barbera, as well as white grape varieties pinot gris, sauvignon and muscat blanc.
