NOTES BY OUR SOMMELIERS

👁 of a beautiful garnet red;

👃🏻 a fruity bouquet emerges on the nose (black currant), vanilla resulting from aging in barrique;

👄 on the palate it is rich and robust, with a fruity and enveloping sip, enriched by a strong tannic texture. It closes on elegant and slightly spicy tones.

 

FOOD PAIRINGS

This blend of Cabernet Sauvignon and Cabernet Franc expresses the persistent and herbaceous canons typical of the vines. It loves succulent food with great aromatic persistence. Perfect with red meats, roasted or grilled, especially with game and spicy cheeses.

 

WINE-MAKING AND REFINEMENT

The Cabernet Select comes from Bronzolo, about 10 km south of Bolzano. This 50-year-old plant, which was still planted by the grandfather, is made up of 50% Cabernet Sauvignon and 50% Cabernet Franc. This Cabernet is very elegant, also thanks to the 12-month aging in barrique.

ORIGIN

TERROIR

The area is Alto Adige, an area very suitable for the production of white and red wines. The vineyards of South Tyrol are located at an altitude between 200 and 1000 meters and the vines grow on very different soils. The native variety of Lagrein, for example, prefers warm gravelly or sandy soils, while the local Gewürztraminer vine expresses its best on clayey and very calcareous soils.
Unique are the stony soils of dolomitic limestone, widespread above all in the southern offshoots of the "Strada del Vino" and which originate from the famous mountain massif of the Dolomites, a UNESCO world heritage site. Thanks to their mineral characteristics, these warm and very permeable soils are ideal above all for producing full-bodied white wines with a strong taste.


WINERY

The Hans Rottensteiner winery produces pleasant and authentic wines, pursuing a philosophy based on passion and respect for tradition, the territory and nature. The estate is located in the alpine valley of Bolzano, in South Tyrol, surrounded by a fascinating panorama of vineyards and ancient farms. The company has belonged to the family for several generations: it was in fact founded by Hans Rottensteiner around the second half of the last century, in 1956. His son Anton supported him and later took over the company by increasing production and cultivated varieties, and introducing the bottling of wine, which until then was sold in bulk. Since 2001 his son Hannes has taken on the role of winemaker, continuing the family tradition and allowing Anton to focus on work in the vineyard and on the quality of the grapes. Careful and rigorous processing both in the vineyard and in the cellar allow to enhance the characteristics of the grapes, coming mainly from local varieties, such as Schiava and Lagrein.
Among the rows, which currently extend over an area of ​​10 hectares, respect for the environment, nature and ecosystem is maximum and rigorous, throughout the seasonal cycle and with additional attention near the harvest.
