Production and refinement

Cabernet Sauvignon in purity, hand-harvested at the end of September.

The grapes are crushed and macerated in a vat for a period of 25-35 days, depending on the vintage, using the traditional method of cap immersion. The wine is then aged and rested in 225-liter oak barrels for eight months.

Olfactory examination

On the nose, it expresses a beautiful fruity bouquet with prominent notes of berries, along with herbal undertones typical of the grape variety. Subtle hints of spices complete the profile.

Tasting

On the palate, it is fresh, smooth, and highly drinkable, with an interesting tannic profile. The finish is very pleasant and long.

Primorska

Primorska è una regione vinicola della Slovenia situata a ovest, al confine con l'Italia e condividendo una piccola parte della penisola istriana con la Croazia. Questa area è nota per la sua straordinaria diversità di terroir e per la qualità dei suoi vini.

La regione è suddivisa in 4 distretti distinti, ciascuno con caratteristiche uniche:

1. Vipavska Dolina: Questa valle, formata dal fiume Vipacco e situata al confine con la pianura Isontina, è anche conosciuta come la “California slovena” per il suo clima mite. La regione produce vini di alta qualità grazie alla combinazione di suoli fertili e condizioni climatiche favorevoli.

2. Goriška Brda (Collio Sloveno): Situata al confine con l'Italia, Goriška Brda è famosa per i suoi vini che sono l'equivalente sloveno dei pregiati vini del Collio Goriziano. Qui si producono eccellenti varietà come Ribolla Gialla, Chardonnay, Sauvignon Blanc e Pinot Grigio.

3. Slovenska Istra (Istria Slovena): Questa area è conosciuta per la produzione di Malvasia Istriana, un vitigno che produce vini bianchi aromatici e ben strutturati, tipici di questa parte della regione.

4. Kras (Carso Sloveno): Noto per i suoi vini rossi dal sapore forte e secco, il Kras è famoso per il vitigno autoctono Terrano. Inoltre, qui si producono anche vini bianchi con l'autoctono Vitouska, caratterizzati da un profilo distintivo e un forte legame con il territorio.

Goriška Brda (Slovenian Collio)

The Goriška Brda region in Slovenia is a sub-region of Primorje. It produces a series of wines known worldwide for their distinction and class.

We are in Slovenian Collio, characterized by soils composed of the famous ponca, a mixture of marl and sandstone. Here, the focus is mainly on Rebula (Slovenian Ribolla, yellow and green).

The refinement and oenological stature of Goriška Brda are due to the grape varieties, the climate, and the savoir-faire of the local winemakers. These elements define a style of wine that is not found anywhere else in Slovenia or the world.
