Production and refinement

The vines are on average 35 years old, planted in limestone soils in prestigious Premier Cru territories; manual harvest of the grapes.

Vinification in stainless steel tanks, light cold filtration, double fermentation according to the Champagne method, aging on lees in the cellar for 2-3 years.

Continuous and fine perlage; the color is a bright, clear, and luminous gold.

Olfactory examination

On the nose, it reveals a lovely maturity with aromas of dried fruit, highlighted by a hint of biscuit. With aeration, notes of yellow fruit, predominantly apricot, emerge. The finish features a touch of tangy lemon candy.

Tasting

On the palate, it is soft and lively. This duality is confirmed by a balance between maturity and residual freshness. The finish features notes of marasca in brandy. A brut that captivates with its fullness and maturity while maintaining a pleasant freshness.

Gaston Revolte

La famiglia Révolte, radicata ad Avenay-Val-D’or, tramanda da generazioni la tradizione vitivinicola con l’obiettivo di produrre uno Champagne che rispecchi il terroir. Fondata nel 1963 da Gaston Révolte, l'azienda ha celebrato il cinquantesimo anniversario nel 2013 con il figlio Hubert e sua moglie Hélène, impegnati nella produzione di vini di alta qualità.

Nel 2006, l’azienda ha reintrodotto l’aratro trainato da cavalli, una pratica rara nella regione, per preservare l’equilibrio naturale della terra. Hubert gestisce cinque ettari di vigneti a Avenay-Val-D’or 1er Cru e un ettaro a Mutigny, producendo circa 40.000 bottiglie, tra cui spicca la Cuvée du 3e Millénaire, un Pinot Noir in purezza.

Gaston Revolte

Lo Champagne Gaston Révolte si distingue per l'attenzione meticolosa sia in vigna che in cantina, conquistando una clientela fedele grazie al passaparola. Inoltre, Hubert ha co-fondato l'associazione "Des Champagnes et des Terroirs," che organizzerà nel 2014 il primo Festival des Vins de Champagne et de Terroirs ad Avenay-Val-D’or.

The vineyards of Champagne, stretching 150 km east of Paris, challenge the extreme conditions of the northern climate. Situated at the 49th parallel north, the grapes are cultivated with the help of the ocean's influence, which moderates the temperatures, and the extraordinary skills of the vignerons.

Average temperatures, just above 10°C, promote the slow ripening of the grapes, preserving their natural acidity. Despite the humid climate and frequent spring frosts, the region produces ideal grapes for Champagne, thanks to soils rich in chalk and other mineral components. The vineyards, spread over diverse terrains, extend across hills and plains, capturing the essence of the Mistral wind and the few hours of available sunlight.

Montagne de Reims

In the Montagne de Reims, we find a subsoil of chalk with layers of clay and lignite. Here, Pinot Noir expresses all its power in freshness, releasing scents of extraordinary elegance, with notes of currant and spices. Numerous houses, including Roederer, draw from these soils to create prestigious cuvées and vintage champagnes of great value, maintaining a centuries-old tradition in sparkling wine production.
