👁 Brilliant straw yellow color with subtle perlage.

👃🏻 Ethereal bouquet with hints of lysate (bread crust), the olfactory framework, softened by the aromas of dried wild flowers and filled with fruity hints of apple, yellow peach and orange.

👄 Delicately dry and harmonious, with a fresh and full-bodied mouth and an aftertaste of toasted notes and bread crust. It concludes with a clean and dry finish, with a refined final dryness.

RECOMMENDED COMBINATION

A classy sparkling wine to celebrate any important occasion. This sparkling wine pairs well with local Apulian cuisine: Daunia olives, fried anchovies, bread and ricotta. Perfect to accompany a plate of spaghetti with stuffed mussels.

 

REFINEMENT

The carefully harvested native Bombino and Pinot Noir.

Vinification with Classic Method. After vinification, each bottle rests for a minimum of 24 months protected from light, air currents and shocks, at a temperature of 13° C, in the basement of the ancient cellar, and about two months before marketing it is disgorged à la glace manually.

TERRITORY OF ORIGIN

TERROR

The scenario is that of the territory of the municipality of San Severo, in the province of Foggia, in northern Puglia : an area renowned for viticulture.

In the immense fields of the Tavoliere delle Puglie, among wheat, tomatoes and olive trees, the cultivation of vines plays a crucial role in the landscape and economy of the area.

Here the art of making wine has very ancient origins: the San Severo countryside is a land particularly suited to the cultivation of grapes thanks to the mild and windy climate and the conformation of the territory in which the plain alternates with gentle hilly slopes.

San Severo DOC was the first denomination of Puglia. If the whole region is a land with a great wine-growing tradition, one of the most important areas is the province of Foggia, where mainly bombino bianco, uva di Troia, montepulciano and falanghina are grown.

The white bombino, in particular, has been cultivated for a long time in Puglia, perhaps imported from Spain. The name derives from the shape of the bunch which resembles the shape of a child with outstretched arms. If, however, the origin of the name came from Spanish, bombino would derive from "bovine", meaning "good wine".


CELLAR

The D'Araprì winery is a small winery located in northern Puglia, and is a clear example of how the panorama of Italian sparkling wines has experienced new territories with valuable results. The winery represents an excellence of southern Italy which is committed to research for the valorization of Bombino Bianco, and produces sparkling wines with a strong territorial identity that are absolutely worth trying, especially for those looking for unusual and elegant "bubbles" (from Brut to Pas Dosé, from Rosé to “Riserva Nobile”, up to “Gran Cuvé” and “Dama Forestiera”.

Since 1979, the three friends and founders (D'Amico, Rapini and Priore) have worked on their land located between the Majella and the Gargano in the San Severo countryside. This area benefits from a particular microclimate which protects the vineyards from frost and guarantees good ventilation, preventing the onset of fungal diseases. The vineyards are cultivated with low density of plants, around 3500 per hectare, using the Apulian espalier training system.

Conducted according to the rules of conventional agriculture, the rows grow taking advantage of extremely favorable conditions on soils rich in limestone and clay, with the presence of silt and sand, which offer ideal conditions for producing wines for sparkling wine. To complete the picture, the climate, mitigated by the sea and with good temperature variations, adds an equally important piece in the mosaic of the ideal terroir for the production of bubbles.

The work in the cellar recalls the practices of small Champagne producers with the entire procedure, from remuage to disgorgement, carried out manually. The company dedicates great efforts to research on Bombino, a vine capable of producing wines of great structure and longevity, which in this sparkling version develops a unique personality.
