Production and refinement

From Pinot Noir grapes grown in the heart of Burgundy, between Pommard and Meursault. The vines thrive on well-drained, calcareous-clay soils. The grapes are hand-harvested starting in the third decade of September, when they reach the ideal phenolic maturity.

After destemming and gentle pressing of the grapes, fermentation takes place in wooden vats at a controlled temperature, with a 15-day maceration on the skins and frequent punch-downs. The wine then matures in wooden barrels for 6 months, until the completion of malolactic fermentation.

It has a beautiful bright ruby red color.

Olfactory examination

It releases aromas of ripe red fruits, such as cherries, blackberries, and blueberries, accompanied by floral notes of red rose and vegetal hints of humus and aromatic herbs like bay leaf and marjoram.

Tasting

The taste is warm, intense, and persistent, with a good balance between alcohol and acidity, and a mature tannin that provides structure. The finish is slightly mineral, with a freshness that lingers on the palate.

Spanning 9 hectares, the vineyards of the domaine are cultivated sustainably, reflecting Patrick's commitment as an Independent Winemaker to maintain a balance between nature and the quality of the wine. Burgundy

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Côte de Beaune

The Côte de Beaune is an extraordinary region, stretching 26 km from Ladoix-Serrigny to Santenay. This region boasts a unique balance between Chardonnay and Pinot Noir grape varieties, with Chardonnay predominating in the Côte des Blancs and Pinot Noir more prevalent around Beaune and further south.

The diversity of the terroir in the Côte de Beaune is reflected in its wines, which represent some of the finest expressions of Chardonnay and Pinot Noir in the world.
