Production and refinement

Produced from pure Bombino Bianco, grown organically on certified vineyards aged 10-20 years at 80 meters above sea level in the San Severo area, Foggia province. The vineyards are trained with a trellis system, organically fertilized through cover cropping, in a flat terrain with good ventilation and alternating exposures.

Fermentation is spontaneous with a pied de cuve, in steel tanks, using only indigenous yeasts. No fining or filtration. The wine evolves for about 3 years, preserving aromatic integrity and expressive authenticity thanks to an artisanal, low-intervention approach.

Organoleptic analysis

Visual exam

Deep, bright yellow, indicating grape ripeness and natural extraction, without any fining interventions.

Olfactory examination

On the nose, it is broad and Mediterranean: ripe yellow fruits take the lead, accompanied by hints of Mediterranean scrub, light spicy notes, and a touch of balsamic. Aromas that evoke the essence of Puglia.

Tasting

On the palate, it is intense, deep, and mineral, with good structure and a character that remains smooth and easy to drink. The finish is persistent and slightly bitter, with an intriguing almond note that adds personality and length. A highly drinkable wine, offering a balance between softness and tension.

Tenuta Demaio

We are in San Severo, in the province of Foggia.
Starting from a deep family connection with vine and olive farming, in 2010 Antonio Demaio began restoring an old farmhouse, and in 2013 Tenuta Demaio was established with the processing of the first grapes.

The winery had a tradition started by Antonio’s grandfather, which was interrupted in the 1970s with the rise of cooperatives; at that point, the winemaking activity was suspended in favor of agriculture. But for about ten years, Antonio has focused all his energy on growing the estate and restarting wine and oil production.

Tenuta Demaio

From the very beginning, the choice has been to use environmentally friendly methods and respect the grapes by following organic and traditional practices both in the vineyard and in the winery.

Today, Tenuta Demaio produces five labels with a completely respectful approach: minimal phytosanitary interventions, spontaneous fermentations in the cellar, no fining or filtration, and great attention to quality.
The estate covers about 35 hectares, including olive groves and vineyards.

Puglia

The introduction of viticulture in Puglia dates back to antiquity when the Greeks colonized the region and brought with them the culture of the vine. The cultivation spread further thanks to the expansion of the Roman Empire and Christianity, which promoted wine production for liturgical celebrations. Over the centuries, Puglian viticulture has evolved, with the cultivation of native varieties such as Primitivo, Negroamaro, and Bombino Bianco, becoming an important sector of the local economy.

Today, Puglia is one of the leading wine-producing regions in Italy in terms of hectoliters produced, with increasing attention to product quality and national and international recognition.

Puglian vines grow in sunny and windy areas, with a Mediterranean climate characterized by very hot and dry summers and mild but rainy winters.
These climatic conditions, combined with the vast coastal area with the breeze and the influence of the sea, create an ideal microclimate for vine cultivation. In particular, the strong temperature variation between day and night during the ripening months of the vine gives the grapes a unique and distinctive character.
The Puglian vineyard has been designed based on pedoclimatic conditions, and the native grape varieties cultivated here are able to adapt to the arid and stony soils of the region, which are typically limestone in the Salento area (where fresh and acidic wines are produced) and clayey in the north of the region (where production focuses on structured and tannic wines).

San Severo

In the vast fields of the Tavoliere delle Puglie, among wheat, tomatoes, and olive trees, viticulture plays a crucial role in the landscape and economy of the area.

Here, the art of winemaking has ancient origins: the countryside of San Severo is particularly suited to grape cultivation thanks to the mild and breezy climate and the terrain where the plain alternates with gentle hilly slopes. The San Severo DOC was the first denomination in Puglia. One of the most significant areas for viticulture is precisely the province of Foggia, where mainly Bombino Bianco, Uva di Troia, Montepulciano, and Falanghina are cultivated.

Bombino Bianco has been cultivated for a long time in Puglia, perhaps imported from Spain. The name would derive from the shape of the cluster, which resembles the shape of a child with outstretched arms. If instead, the origin of the name came from Spanish, "bombino" would derive from "bovino," meaning "good wine."
The grape variety is mainly present in the Foggia area of Puglia and is listed among the varieties suitable for the production of San Severo DOC.

In the lush Tavoliere delle Puglie, viticulture intertwines with the millennia-old history and varied territory, giving life to San Severo DOC and celebrating varieties like Bombino Bianco, a grape rich in history and tradition.
