👁 characterized by bright straw yellow with a delicate and persistent perlage;

👃🏻 the nose reveals a subtle and elegant bouquet, led by citrus notes and hints of bread crust;

👄 On the palate the sensations are fresh, balanced and savoury; the finish is long and very persistent.

 

FOOD PAIRING

Blau Dore is very versatile and expresses a unique fragrance, thus favouring fresh, light and seasoned dishes. Excellent as a refined aperitif, it goes very well with fish and shellfish starters. We recommend it with salmon tartare and citrus fruits.

 
WINE-MAKING AND REFINEMENT

It takes its name from the combination of the names given to the pinot noir grape variety that makes up the cuvée: "Blauburgunder" in German and "Plant Dorè" in French. After being hand-picked and carefully selected, the grapes are fermented at a controlled temperature in stainless steel tanks. 

Once alcoholic fermentation is complete, the Blanc de Noirs Trento DOC re-ferments in the bottle according to the champenoise or classic method; it remains on the lees for 30 months. The sparkling wine then matures in barriques and rests briefly in bottles before being sold.

ORIGIN

TERROIR

The area of origin is Trento DOC, homeland of renowned sparkling wines, distinguished by elegant wines that express a unique concept of territoriality. The success and uniqueness of Trento DOC sparkling wine is due precisely to the characteristics of its territory of origin: indeed, the combination of climate, different altitudes, soil and Trentino "savoir faire" make Trento DOC not just a simple sparkling wine, rather an increasingly recognised and awarded mountain sparkling wine

Despite its small size, Trentino is covered by 10,000 hectares of vines, with 8% of grapes destined for sparkling wine production and a total production of 7 million bottles per year. The vines flourish in different climates: it is possible to go from a mountain microclimate to the milder climate of Lake Garda. 

Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties grown for Trento DOC sparkling wine are chardonnay and pinot noir.
Finally, the area of organic vineyards in Trentino is constantly increasing, as a natural consequence of the attention and responsibility of the sparkling wine producers towards the original terroir.


WINERY

Pravis is a winery founded in the Trento DOC area by three friends, three winemakers who share the passion for viticulture and for the Trentino region. The winery was founded forty years ago; it is located in Lasino, in the province of Trento, in a rural landscape of medieval castles, lakes and mountains. 

Pravis is now in its second generation, to whom the passion for wine and care for the land has been passed on.
The winery has been carved into the rock, perfectly integrated into the surrounding environment; the vineyards enjoy an alpine climate, mitigated by the currents of the Ora del Garda.
The farm is a member of the FIVi
(Federazione Italiana Vignaioli Indipendenti - Italian Federation of Independent Winegrowers) and has carried out an important work of recovery of some autochthonous varieties of Trentino, saving from the risk of extinction Nosiola, Negrara and Gropello di Revò, a rare vine of Val di Non. The production is varied: from Nosiola to Negrara, from Müller-Thurgau to Kerner, from Trento DOC to grappa.
