Production and refinement

The Sparkling Quality Wine produced by Cantina Monfort represents the excellence of Trento DOC, a renowned region for its mountain sparkling wine production. This wine is crafted from a blend of Valderbara, Vernaccia, and Nosiola, three grape varieties that embody the unique character of the Trentino territory. The grapes come from old vineyards, some of which are over a century old, grown on espalier-trained vines in mountainous soils rich in minerals. The Trentino climate, with its significant temperature variations between day and night, helps preserve the freshness and aromatic complexity of the grapes. The harvest, conducted strictly by hand, allows for the careful selection of the best bunches.

After harvest, the winemaking process takes place in temperature-controlled stainless steel tanks at around 18°C, with the wine remaining in contact with the fine lees until the following spring. The second fermentation is carried out using the Classic Method, with aging on the lees for 12 months, imparting the wine its characteristic complexity and elegance.

Monfort is closely tied to the history of the Simoni family, a dream born in 1945 that has successfully transformed and evolved through four generations. The winery is built on strong, shared values: a love for the land, curiosity for innovation, and trust in tradition. These deep roots have allowed the company to grow over time, always maintaining a strong connection with the Cembra Valley and its winemaking potential.

The sparkling wine tradition at Cantine Monfort began in 1985, thanks to the visionary dream of Lorenzo Simoni, who decided to transform the finest Chardonnay and Pinot Noir grapes from Trentino hills into high-quality classic method sparkling wines. This vision gave birth to Monfort Cuvée ’85 Trentodoc, an iconic label that embodies nearly forty years of experience and passion.

Trentino Alto Adige

Trentino Alto Adige is a region entirely mountainous and divided into the autonomous provinces of Trento and Bolzano, whose border marks a linguistic and administrative watershed.

The attention of wineries and heroic viticulture ensures a consistently high quality level of wines, and particularly the best results are achieved with grapes that thrive in cold climates, such as Sauvignon and Pinot Noir, which here express their varietal characteristics at their best. In addition to the many international varieties, the region also boasts an interesting heritage of native grapes, including Teroldego, Schiava, and Lagrein.

Although it would be difficult to draw a morphological boundary between the two areas geographically, ethnic and linguistic differences on one hand and pedoclimatic differences on the other have also led, over the centuries, to a provincial characterization of wine production.

Both areas, however, share an excellent wine production, thanks also to the geographic position and favorable climatic conditions along the Adige Valley and on the slopes of the mountains that line it, as well as in the flat and hilly areas around Trento and Bolzano.

Trento

The Trento area, in addition to its Trento DOC sparkling wines, is famous for its elegant white wines, typical of grape cultivation in high-altitude terrain.

This territory is distinguished by elegant wines that express a unique concept of territoriality. The success and peculiarity of Trento DOC sparkling wine are due precisely to the characteristics of the territory: the combination of climate, different altitudes, terrain, and Trentino know-how make it not just a simple sparkling wine, but a highly esteemed mountain sparkling wine, increasingly recognized and awarded.

Despite its small size, the Trentino region is covered with 10,000 hectares of vineyards, with a percentage of grapes destined for sparkling wine production accounting for 8% and an annual production of 7 million bottles.

The vineyards benefit from different climates: from a mountain microclimate to the milder one of Lake Garda. Factors such as vineyard altitude and temperature variation play an important role in grape ripening, influencing the organoleptic characteristics of the wines.

The varieties cultivated for Trento DOC sparkling wine are Chardonnay and Pinot Noir. The area of organic vineyards in Trentino is steadily increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards product healthiness.
