👃🏻 the nose expresses an intense bouquet and fruity, broad, floral due to müller thurgau which prepares for the taste sensations by giving the classic almond hint that prolongs the finish;
👄 on the palate it presents itself as fresh, savory and persistent taste. The spirit of Rhenish riesling manifests itself through its characteristic traits: pleasantness imbued with savory minerality and gustatory breadth.

It is a wine that goes well with dishes based on both sea and freshwater fish and which, due to its peculiarities, is perfect for unforgettable aperitifs.
REFINEMENT
Cultivation organic , harvest manual. The fully ripe Müller Thurgau grapes are harvested first and pressed using soft pressing; Once the fermentation of the must has started, the Riesling Renano grapes are harvested, always at full ripeness, which are pressed with the same technique: the must is added to the Müller Thurgau and together they complete the fermentation. Maturation and refinement in steel tanks, decanting and bottling in spring.

The company is located in Oltrepò Pavese, in the municipality of Borgo Priolo. It is an area suited par excellence to the production of grapes and wine: in fact its viticultural history dates back at least 2000 years. The vine area of 13,269 hectares, out of a regional total of 24,000, thus represents approximately 55% of the vine area in Lombardy. The territory is hilly with steep slopes that rise up to 1,700 meters above sea level in the first Apennines and more rounded ridges in the eastern area towards Piacenza.
The Oltrepò hills offer a continuum highly attractive landscape and represent the third largest Italian area in terms of surface area almost entirely covered with vines and with mainly denomination production. The variety of the territory, the proximity of the sea and the presence of rivers and streams influence the climate, which is mild and temperate, with excellent excursions between night and day, especially in the summer period.
CELLAR
Those who know a little about the world of wine know that Castello di Stefanago is a model. More: a precursor. The brothers Antonio and Giacomo Baruffaldi manage the company in Borgo Priolo, in the Oltrepò Pavese area. An estate of 22 hectares of vineyards, in the center of which stands the castle tower, testimony to a thousand-year history. They chose agriculture biological when it was not yet so widespread, when sensitivity to the topic was not as strong as it is today. At Castello di Stefanago the vineyard is an ecosystem independent , it is the sun at the center of the universe: it is observed and cared for in order to adapt each intervention to real needs, without ever losing sight of the health of the plants and the vitality of the soil. It is an almost holistic approach, which requires attention to many details and the respect unconditional for the nature . I often meet Antonio and Giacomo when traveling to trade fairs: they always have something new to try. After all, they farm barbera , pinot black, Croatian , pinot grey, cabernet sauvignon And riesling Renano : there is no shortage of grapes, nor wisdom.
