👁 a beautiful straw yellow with greenish reflections;

👃🏻 the nose expresses a fruity bouquet (ripe yellow fruit), with an aromatic finish

👄 on the palate it is savoury, fresh and full-bodied, making full use of the tufaceous soil on which it stands. There is a nice acid note that makes it easy to drink, and a certain minerality that enhances the bitter finish.

FOOD PAIRINGS

This Bianchello is a very versatile wine endowed with freshness, sapidity and acidity, which is why it pairs well with fresh, light, seasonal dishes. Ideal with fresh cheeses, first courses and grilled fish and legume soups. Perfect with fried food.

WINE-MAKING AND REFINEMENT

Biancame (the grape variety that is the basis of Bianchello del Metauro) is a very productive grape, a close relative of the Romagna pagadebit; the wines historically produced are fresh, easy-drinking and to be consumed young. Tommaso Di Sante has decided to fish out a very old and much less productive clone of Biancame to produce a white of great territorial expressiveness. A pure Bianchello worked according to the ancient, peasant method. Harvesting is done manually at the end of September. The grapes are softly crushed and destemmed, the whole bunches are chilled in an inert atmosphere while vinification is white with fermentation at a controlled temperature for about 15 days. This is followed by ageing on fine lees for 9 months between steel and bottle.

ORIGIN

TERROIR

We are in Pesaro Urbino, in the Bianchello del Metauro DOC wine zone. From the union of the two rivers that descend from the Marche Apennines: 'Meta' and 'Auro', the Metauro River begins near Mercatello sul Metauro. Along the valley of this river are Roman municipalities: S. Angelo in Vado, Fossombrone and Fano and the part towards this river of the plain of Urbino. The production territory delimited by the Bianchello di Metauro denomination is bounded to the south by the Cesano river and to the north by the Arzilla river.

It is practically centralised around the basin of the Metauro river, which crosses it longitudinally for its entire extension. Consisting practically of low hill and valley territory, the production area is therefore quite homogeneous. The geological materials of the low hills are equally divided between strongly clayey and arenitic types, giving rise to sharp contrasts in the reliefs and nature of the soils.

WINERY

Azienda Agraria Di Sante has passed on its passion for wine from generation to generation. It was in fact great-grandfather Timoteo Di Sante who, at the end of the 19th century, started production for family consumption on a small plot of land near the village of Magliano. Oddo, the son, has kept his love for the land by continuing to look after the family vineyard.

Today, the company is managed by Tommaso Di Sante, who in recent years has increased production, enlarging the company by adding new land and building a modern wine cellar in Carignano. The company has 30 hectares of vineyards, located on the sunny hills of the Fano hinterland a few kilometres from the sea, between the hermitage of Monte Giove and the Carignano spa, and an olive grove of about 4,000 trees. It should be noted that for the production of Bianchello del Metauro they have chosen to use a very old clone, less productive, but of decidedly higher quality.
