👁 of a beautiful pale golden yellow;

👃🏻 the nose expresses notes of rosemary, balsamic, fruity bouquet, with a nice note of honey;

👄 on the palate it expresses itself with a marked acidity, it is soft and full, savory and with a very long finish. Truly special.

 

FOOD PAIRINGS

This Pinot Blanc has excellent acidity and a character that make it perfect even with very substantial food. It pairs perfectly with aged cheeses, blue cheese and spicy dishes, especially with mustard.

 
WINE-MAKING AND REFINEMENT

This 100% Pinot Blanc is grown in the Goriška Brda region. After the harvest and careful selection of the grapes, soft pressing takes place and then fermentation in stainless steel tanks at a controlled temperature and static decantation of the must. The wine is aged in French oak barrels for at least a year and patiently aged in the bottle for many months before being marketed.

ORIGIN

TERROIR

We are in the Goriška Brda region of Slovenia. This sub-region of Primorje produces a series of wines known all over the world for their distinction and class. A must for anyone visiting the wine region are its superb wines. This is the Slovenian Collio, characterized by soils composed of the famous "ponca", a mixture of marl and sandstone.
Rebula (Slovenian Ribolla, yellow and green) is mainly produced here. The refinement and scope of Goriška Brda are due to the grape varieties, climate and savoir faire of the area's winemakers. These elements define a style of wine that is not found anywhere else in Slovenia and in the world.


WINERY

The winery is led by a French winemaker (Jean Michel), who after a career in important Chateaux in France and wineries in Friuli goes to Slovenia and starts making wine according to the "Georgian method". Kabaj wines reflect a precise and simple philosophy: to produce the highest quality wines apossible, focusing on respecting nature, vineyards and soil.
All wines age in French barrels for at least a year, followed by months in the bottle, so that the taste is refined. Moreover, another type of ageing is also practized in the winery: the amphora, for truly unique macerated wines.The American Wine & Spirits has given Kabaj the title of one of the 100 best wineries of the year four times already. A company worth knowing for those looking for truly special wines, produced in just 15 hectares of vineyards.
