👁 a beautiful bright pale straw yellow;


👃🏻 on the nose it stands out for its pleasant and persistent aromas: citrus fruits, flowers, mineral hints;

👄 on the palate it is very fresh, decidedly persistent, with a taste characterised by a great concentration of mineral salts. A full-bodied white, with returns on the finish of the fine scents perceived on the nose.


 

FOOD PAIRINGS

This Asprinio is fresh and fragrant. It prefers fresh, light and territorial dishes. Perfect with eggs, savoury pies, appetisers, fried fish and even sushi.


WINE-MAKING AND REFINEMENT

From a predominantly sandy volcanic vineyard with 50-60 year old vines in the Agro Aversano area. The grapes are harvested by hand in crates, followed by destemming, vacuum pressing and fermentation in steel containers. Refinement begins immediately after the end of alcoholic fermentation, with a year's rest on the fine lees and repeated batonnage, bringing the noble lees back into suspension, in order to better structure the wine. This process makes this Asprinio a stable wine in a completely natural way, without further intervention. Refinement in the bottle often lasts for several years.


Approximately 2,600 total bottles per year are produced.

ORIGIN

TERROIR

We are in the province of Caserta, the home of Asprinio. An area that was once forgotten but which today, thanks to the skilful work of wine growers, is yielding excellent results in terms of wine production. Many producers, in fact, by innovating and diversifying their cultivations, have started a recovery effort, even of historical vines. Cradle of many indigenous vines, the most important and rare is undoubtedly Asprinio. The clusters of this wine are small, medium-sized and winged. The berries are small, round and yellowish green in colour. Ripening takes place between the end of September and the first ten days of October. The climate is continental, the soils mostly clayey.


WINERY

I Borboni is an important winery for the valorisation of the thousand-year-old tradition of Asprinio di Aversa, saved from extinction since the 1980s. The winery is now located in the historical centre of Lusciano and consists of a house built on a tuff cave. The asprinio vine, which has a history stretching back thousands of years, is cultivated on free-standing vines according to the alberata system, i.e. 'marinated' to the tall poplars.
Harvesting, strictly manual, therefore requires heroic efforts with the use of the typical 'scalillo', a long, narrow ladder. The harvested grapes are taken to the characteristic tuff caves for the production of white wine and, today, also sparkling wine. The wines of the I Borboni wine cellar have become a symbol and reference point for Asprinio di Aversa, whether vinified still or sparkling.
Love for the territory, dedication and sacrifice are the values that have enabled the recovery and safeguarding of the vine and its history, leading to the institution of the DOC in 1993. These labels offer precious evidence of territorial traditions, already known in ancient times, which risked being lost forever and which, fortunately, have been preserved thanks to the work and effort of producers like the Numeroso family.
