Production and refinement

Chardonnay and Pinot Noir: the classic sparkling wine grapes from a vineyard in the municipality of Mango located at 500 meters above sea level, with a north-east exposure and marly soil. Manual harvest in crates with selection of the bunches in the vineyard.

Destemming and pressing of the grapes, cold maceration with the skins for a few hours in horizontal presses and subsequent pressing. White vinification with the Classic Method and permanence on the yeasts for about 180 days. Refinement in the bottle for a few months.

Intense straw yellow, with fine and persistent foam.

Olfactory examination

On the nose it is floral, fine and elegant, with notes of fresh fruit, bread crust and yeast.

Tasting

In the mouth it is mineral, complex and balanced with a note of gentle and harmonious acidity; beautiful dry finish.

Secondino Barbero founded Cascina Fonda in 1963 in Neive, located in the Langhe region, drawing on his extensive experience in viticulture and driven by a deep passion for wine. Today, the Barbero family, represented by Massimo and Marco, has chosen to focus almost exclusively on one particular variety: Moscato, while still cultivating other typical regional varieties such as Nebbiolo, Brachetto, Dolcetto, and Arneis.

The passion passed down to his sons by Secondino has enabled Cascina Fonda to become a winery that best showcases the potential of Moscato, thanks to a modern cellar and the adoption of winemaking techniques suitable for enhancing this complex grape. The limited number of treatments, along with the consistency and meticulous care in vineyard operations, ensure that the grapes brought to the cellar reflect the aromas and characteristics of a unique land. The range of wines produced is mainly based on labels made from Moscato grapes, including Moscato d’Asti DOCG “Bel Piano,” Asti Spumante DOCG “Bel Piasì,” and Asti Metodo Classico Dolce DOCG “Driveri,” the latter aged on its lees for a full 60 months. The vineyard spans 12 hectares.

In Piedmont, the first traces of viticulture date back to pre-Roman times (precisely to the Bronze Age, around 1500 B.C.), and although today the peak of quality is found in the region's great red wines, Piedmont also produces excellent white wines and sparkling wines.

The role of Piedmont has been fundamental for the development of modern Italian winemaking. It is here that the first examples of zoning of wine-growing areas were recorded, introducing concepts such as terroir and cru to Italian wines. Thanks to zoning, if a wine is produced exclusively from grapes coming from a single vineyard or parcel, the geographical indication appears on the label, increasing its prestige.

In addition to the geographical delineations indicated on the map, Piedmont is divided into 8 zones that group the 16 DOCG and 42 regional DOCs. Among these, we remember in the north the famous Gattinara DOCG and Ghemme DOCG, near Turin the Erbaluce di Caluso DOCG, in Monferrato the Barbera del Monferrato Superiore DOCG, Brachetto d’Acqui DOCG, Dogliani DOCG, Ovada DOCG, Gavi DOCG, and Ruchè di Castagnole Monferrato DOCG, ending with Roero DOCG to the left of the Tanaro river and, in the Langhe region, with the famous Barolo DOCG, Barbaresco DOCG, and Dogliani DOCG.

In Piedmont, the revolution in the world of wine began, bringing Italy back to the forefront of high-quality production. Here, with few exceptions, single-varietal wines are produced, which best express the characteristics of the terroir and magnificently exalt the Piedmontese territory.

Monferrato

The Monferrato area is one of the most important wine regions worldwide, designated as a UNESCO World Heritage Site. Among these picturesque hills, Barbera is produced, a truly extraordinary, versatile, and fresh grape variety.

In Monferrato, vineyards almost entirely cover the hilltops and slopes, interspersed with small woods, in landscapes of great beauty. The wide diversity of soils allows for the production of very complex wines with a broad bouquet.

The soils are calcareous-marly, ranging in color from white to light gray or beige, rich in calcium carbonate. This allows for the production of full-bodied wines, rich in color (in reds), sometimes with a hint of tufa, suitable for aging. The red soils, on the other hand, are deeper and richer, containing clay, silt, iron oxides, and magnesium, and are excellent for producing white wines. The sandy soils of Asti produce excellent red wines characterized by low acidity and fast saturation.

Finally, on these soils, during very dry years, the vine may suffer from water stress because the higher percentage of sand does not allow the soil to retain water.

Monferrato, a UNESCO World Heritage Site, produces versatile and fresh Barbera in calcareous-marly soils, yielding complex and characteristic wines.
