This Aglianico is intense, persistent, with tannins that make it very pleasant to drink: it is particularly suitable for roasts and in general all second courses of meat, also spit-roasted and game. It can also be served with mature cheeses. Perfect with tagliatelle with beef ragout.
WINE-MAKING AND REFINEMENT
100% aglianico grapes from vineyards located in Lapio. The harvest takes place between the last week of September and the first week of October, strictly hand-picked. After soft pressing, fermentation is carried out at controlled temperature in steel. The wine matures for six months in steel, followed by six months of refinement in the bottle.

ORIGIN
TERROIR
This is the province of Avellino, in Irpinia. Irpinia is characterised by a heterogeneous landscape variety, designed by mountains, hills, valleys and plateaus.
The territory has a strong and unique identity due to the peculiarities of the subsoil and climatic conditions. Following the powerful eruption of Vesuvius several thousand years ago, pyroclastic materials carried by strong winds settled on the Irpinia territory, creating a thick layer of volcanic materials, which consolidated over the centuries. Today, the terroir of Irpinia is very rich in mineral micronutrients. More superficial layers are formed by stratified limestone, whereas the hills and valleys are made up of deposits of arenaceous and clayey materials. The soils show above all a well-balanced texture, free of clay, with frequent stoniness. The mediterranean climate gives the area cold, wet winters and hot summers, with large temperature differences between day and night. The balance between climate, vines and soil is perfect. A balance that has become increasingly harmonious over the centuries, giving rise to wines with excellent characteristics, characterised by aromatic complexity, a velvety, full and elegant taste, intense and delicate aromas.
WINERY
The winery was founded in 2018 by brothers Antonio and Angelo Melchionno, two young boys who inherited the family vineyards and decided to give birth to their creature. Not even five hectares, all owned in one of the most suitable areas of the Fiano DOCG, Lapio, in the heart of Irpinia. They decided to produce a wine conceived in the best possible artisanal way, without the addition of selected yeasts and with interventionism in the cellar reduced to a very minimum.
Il Sole e il Lupo is an organic company. The aim is to take care of the land, as our grandparents did. The vineyards are situated at an altitude ranging from 400 to 580 metres above sea level with a south-eastern exposure. The vines grow in a clayey loamy soil with a tendency to limestone.
The altitude of the vineyards combined with the microclimate formed by the climatic excursions between day and night, lead to a more gradual ripening of the grapes, favouring the concentration of aromatic substances in the peel.
