Casebianche was born in 2000 when we abandoned our activities as architects to take care of the family agricultural estate. So we started observing and taking care of our vineyards, with experimental winemaking; six years later, the first bottling.
Casebianche is a 14-hectare company in the municipality of Torchiara, in the province of Salerno, between Monte Stella, the Paestum plain and the Cilento sea. In addition to olive trees, citrus fruits and figs, we cultivate 5 hectares of vineyards, with Aglianico and Fiano predominantly, and then Barbera, Piedirosso, Malvasia, Santa Sofia and Trebbiano. With these grapes, some from old vineyards, we create our seven wines. Among these, Dellemore has a vinification process built on maximum simplicity (brief maceration on the skins) and aging in steel and tonneau for a wine that smells of spring.
Cupersito, on the other hand, is made with the best Aglianico grapes from our vineyards, aged in wood and makes you dream of the sea.
We adopt the organic cultivation method and have long since started an agrological program that looks with interest at biodynamic practices. In the field we intervene as little as possible, limiting ourselves to mechanical processing, natural fertilizations and green manures to enrich the life of the soil. In the cellar we limit the use of sulfur dioxide as much as possible and the fermentations take place respecting the living material.
