Stefanago Castle
Stefanago Bianco is made with two different grapes, both harvested manually: first the Müller Thurgau grapes are harvested and pressed through soft pressing; Once the fermentation of the must has started, the Riesling Renano grapes are harvested, pressed in the same way and added to the Müller; together they complete the fermentation.
Stefanago Bianco matures and refines in steel tanks and is decanted and bottled in spring.
It is a pleasant and young wine, which easily pairs with any dish and, due to its drinkability, is particularly suitable for accompanying convivial lunches and dinners. We recommend serving it at a temperature between 12 and 14 degrees.
Ancestral_Blanc de Blancs
The "ancestral" method is the one anciently used to produce sparkling wines without the use of technology.
The Chardonnay, Riesling and Müller Thurgau grapes of our Ancestrale Blanc de Blancs , when fully ripe, are harvested by hand, with selection of the bunches, and crushed by soft pressing, then macerated for about two days on the skins. The fermentation stops with the arrival of the first cold weather (when a residual sugar is still present) until the arrival of spring awakens the yeasts, which slowly complete the transformation of the sugars into alcohol: thus the second fermentation begins in bottle necessary for the transformation of wine into sparkling wine. After 24 months we proceed with the "disgorgement" by hand, topping up the bottles with the same wine, without adding anything.
With its continuous and subtle perlage, the Ancestrale Blanc de Blancs (of which we produce 4,000 bottles a year) is ideal for an aperitif or throughout a meal. We recommend serving it at a temperature of 10-12 degrees.
