Production and refinement

Vernaccia in purezza, che proviene da un clone trovato in una vecchia vigna locale.

Il mosto ottenuto mediante una lenta e soffice pressatura, viene raffreddato così da ottenerne prontamente illimpidimento in 36/48 ore. Segue una lunga fermentazione con temperatura controllata di 16° ed una permanenza di circa 6 mesi sui lieviti con rimontaggi e batonnage settimanali. Imbottigliato nella primavera successiva alla vendemmia, viene affinato in bottiglia prima di essere posto in vendita.

Di un bel colore giallo paglierino con riflessi verdolini.

Olfactory examination

Al naso regala note iniziali di frutta, sia esotica che mela verde e pera, alternate a quelle floreali, di acacia e biancospino; poi tutto è racchiuso in un finale di note agrumate.

Tasting

In bocca esprime un gusto pieno, di decisa freschezza, minerale, equilibrato e di giusta sapidità, con una piacevole nota di mandorla sul finale.

Il Palagione

Il Palagione is an ancient estate dating back to the late 1500s, purchased in the 1990s by Giorgio and Manuela with the intention of revitalizing this important enological estate in San Gimignano. We are in an area where the soils are dominated by clay and pebbles, as well as shells, which serve as a reminder that this land was once a seabed. The vineyards benefit from full sun exposure and are gently grassed to retain moisture in the soil.

Il Palagione

The Vernaccia grapes are hand-harvested and vinified separately for each vineyard in order to achieve the best expression of the terroir for that vintage. After a brief maceration on the skins, the grapes are gently pressed; the resulting must ferments at a controlled temperature, never exceeding 16°C, and then matures on the fine lees with weekly bâtonnage. The subsequent aging, both in wood and in the bottle, takes place in an underground cellar with natural temperature and humidity.

The Tuscan landscape also tells the story of the territory's strong winemaking vocation: from the hills of Chianti and the Etruscan Coast to the panoramas of Val d’Orcia and Val di Chiana, kilometers of splendid vineyards stretch out before our eyes, producing excellent wines.

Tuscany is one of Italy's most suitable regions for the production of quality wines and has conquered world markets since the 1980s. Bathed by the Ligurian Sea and the Tyrrhenian Sea, it has predominantly hilly terrain with a temperate climate, mild winters, and cool summers.

A special mention goes to "galestro," a type of local soil that also gives its name to a wine from the Chianti area.

San Gimignano

San Gimignano is a town located in the Sienese hills, famous for its medieval architecture its towers that make it a popular tourist attraction. This area, in addition to being popular with tourists, is also renowned for its wines, particularly Vernaccia di San Gimignano, which was the first Italian wine to be granted DOC (denomination of controlled origin) status in 1966.

In addition to Vernaccia, the area also produces high-quality red wines, including Chianti Colli Senesi, Rosso di Montepulciano, and Brunello di Montalcino. In addition, the area is famous for the production of extra virgin olive oil, cheeses, cured meats, and other specialtyculinarie.

The Vernaccia di San Gimignano production area covers about 1,200 hectares and includes a series of hills southwest of Florence, which are cultivated by more than 200 wine producers.
The grapes are grown in limestone and clay soils, and the wine has a firm structure, good acidity and a floral aroma.
