Production and refinement

The grapes (100% Pinot Noir) come from a hectare and a half of vineyards rooted in clay-limestone soils typical of the Givry area, which lend structure and finesse. Harvesting is done by hand, followed by full destemming. The 25-year-old vines contribute concentration and complexity to the wine's aromatic profile.

Vinified in temperature-controlled stainless steel, it then ages on fine lees for several months, preserving the precision of the fruit and developing a silky texture. The use of stainless steel enhances a pure and direct expression of Pinot Noir, elevating its natural freshness.

Visual exam

A beautiful bright ruby red color, with violet reflections and good transparency.

Olfactory examination

On the nose, it reveals aromas of fresh red fruits such as cherry, wild strawberry, and raspberry, enriched by spicy notes (pepper) and hints of balsamic and earthy undertones (forest floor).

Tasting

On the palate, it unfolds soft, fleshy, and velvety, marked by fine tannins, vibrant acidity, and a dynamic balance. The finish is long and persistent, with beautiful fruity echoes. Exceptionally elegant.

Domaine Deliance

In the heart of southern Burgundy, in Givry, lies Domaine Deliance, a family-owned winery with deep roots in a long viticultural tradition. The history of the winery began with the first generations of the Deliance family, custodians of knowledge passed down from father to son, harvest after harvest. Today, the third generation leads the domaine, represented by four family members who, united by a profound connection to the land and their origins, continue to breathe life into this heritage with passion and dedication.

The vineyard stretches across 18 hectares in the hilly area of the Côte Chalonnaise, a region historically renowned for the cultivation of Pinot Noir and Chardonnay. Here, between clay-limestone soils, favorable exposures, and a temperate climate, elegant, precise, and deeply characteristic wines are born. The care of the vineyard is at the core of the winery’s philosophy: each plot is worked with artisanal attention, following environmentally respectful practices and natural rhythms, with strictly manual harvests and meticulous grape selection.

Domaine Deliance

Domaine Deliance produces both Grands Vins de Bourgogne and Crémants de Bourgogne, each an authentic expression of the terroir and the spirit of the house. The still wines reflect the purity of the fruit and the mineral tension typical of the appellation, while the Crémants offer a refined interpretation of Burgundy’s sparkling wine production, surprising with their complexity and finesse.

But the true heartbeat of the domaine lies in its respect for family history: each bottle is the result of a promise kept, a memory preserved, and a desire for expressive freedom that translates into sincere, vibrant, and never banal wines.

Burgundy

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Côte Chalonnaise

Burgundy stretches south and almost touches the Rhône. In this territory lies the Côte Chalonnaise, an area 35 km long and 7 km wide that extends south of the Côte d'Or (from south of Chagny to Sercy, passing through Chalon-sur-Saône). It has a generally warmer climate compared to other regions of Burgundy.

It is a less prestigious subzone but has several Premier Crus and is worth keeping an eye on. The best Chardonnays grow on clay-limestone soils with east and southeast exposure. The best Pinot Noirs are planted on more calcareous soils.

Here, a unique productive island is the AOC Bouzeron because it does not utilize Chardonnay—as in the rest of the territory—but the less aristocratic Aligoté, which here expresses unique freshness qualities.

Roast goose stuffed is a dish from the rural tradition, rather easy to prepare and enriched with chestnuts and figs, potatoes and onions, or other vegetables. Rich in flavor, with excellent structure and aromatic persistence.
