Production and refinement

100% Moscato from a vineyard organically farmed in Contrada San Lorenzo, in Noto. The vines are trained using the spalliera (vertical trellis) system and rooted in white limestone soils. The grapes are carefully hand-harvested.

Spontaneous fermentation of the grapes in concrete tanks. Vinified using the Ancestral Method: the sugars in the must are monitored and, once they reach the optimal level for secondary fermentation, the wine is bottled and sealed with a crown cap to naturally complete fermentation in the bottle. Produced in only 1,200 bottles per year with a completely natural approach: no fining, minimal filtration, and low sulfite content.

Olfactory examination

Thanks to the aromatic grape variety, the nose reveals an intense and exuberant profile, combining fragrant notes of toasted bread with hints of fresh fruit and Mediterranean herbs.

On the palate, it stands out with a juicy, fresh, and vibrant sip, finishing with a pleasant saline note. A wine that manages to be both ancient and contemporary, rustic and refined.

Cantina Marilina

Located in Noto, in the province of Syracuse, Cantina Marilina is a winery that stands out for its strong territorial identity and commitment to organic production. Founded in 2001 by Angelo Paternò and his daughter Marilina, the winery is the result of a deep love for the Valle di Noto, one of the sunniest and breeziest areas of Sicily, characterized by limestone soils that impart longevity and elegance to the wines. They have preserved the traditional bush vines, integrating them with the classic local cultivation system that allows for interaction between the vines and fruit trees.

Currently, the estate cultivates a total of 35 hectares of vineyards, including 25 hectares of existing vines and 10 hectares of new plantings dedicated to indigenous and international grape varieties. From the beginning, Cantina Marilina has focused its production on three indigenous varieties: Nero d’Avola, Moscato, and Grecanico, reflecting a profound respect for the territory and a dedication to following the natural cycles of the vineyard, avoiding any forcing in the winemaking process.

In 2007, Angelo Paternò began the construction of the winery, which was completed in 2009, thus realizing his dream of producing wines with a strong territorial identity. Cantina Marilina has been organic since its inception and pays particular attention to sustainability not only in viticulture but also in the winemaking process, using recyclable glass bottles, labels made from recycled natural paper, and natural cork stoppers.

These choices reflect the winery's commitment to responsible and environmentally friendly production. Cantina Marilina is a shining example of how tradition can coexist with innovation and sustainability, producing high-quality wines that tell the story and beauty of the Valle di Noto, destined to captivate the palates of wine experts and enthusiasts around the world.

Sicilian wine territory is now considered a true continent, thanks to its pedoclimatic variability and rich biodiversity. It is located in the center of the Mediterranean and in the so-called "northern sunbelt," an area between the 30th and 50th parallels north and the 30th and 40th parallels south, where the best conditions of brightness and temperature for vine cultivation are found.

On the smaller islands, given the high temperatures and windy conditions, the typical training system is the "alberello" and its "mixed" versions (for example, on the island of Pantelleria), as well as the "Tendone" system. In the rest of Sicilian territory, however, more than half of the vineyards use espaliers and contre-espaliers. In Sicily, wines with a long history are born, such as Marsala, but also fragrant dessert wines like Passito di Pantelleria and Malvasia delle Lipari, not to mention Moscato di Noto and numerous robust red wines and interesting white wines. There's also Nerello Mascalese, climbing the slopes of Mount Etna.

Val di Noto

The Val di Noto is characterized by a unique terroir: it ranks first among the sunniest territories in Sicily and is the second windiest area in the region, after Trapani.

The white calcareous soils play a significant role. In fact, Nero d’Avola, Moscato, and Grecanico wines produced here acquire a special character, precisely due to the calcareous soils that allow for beautiful structures and longer aging, providing longevity and elegance to the wines.

The Noto DOC denomination covers red and white wines from Moscato grapes produced in the southern part of the province of Siracusa in eastern Sicily, particularly in the municipalities of Noto, Rosolini, Pachino, and Avola.

The Val di Noto, kissed by the sun and refreshed by the winds, offers a unique terroir in Sicily, characterized by calcareous soils that impart character and elegance to Nero d’Avola.
