Production and refinement

Grapes are manually harvested from various plots in the vineyards of Hautvillers, renowned for its rich winemaking tradition.

The pressing of the grapes is done with a historic wooden press from 1888, used since the foundation of the Maison. The resulting free-run juice is slowly fermented in stainless steel vats, using indigenous yeasts. After malolactic fermentation, the wine is bottled for the second fermentation, where it ages on the lees for 30 months. The disgorging takes place after controlled maturation in the cellar at 12°C.

It has a beautiful bright golden color and a fine, persistent perlage.

Olfactory examination

On the nose, it captivates with its finesse, opening with aromas of ripe white fruit, like apple, accompanied by floral notes of acacia and delicate hints of butter and honey, adding complexity to the bouquet.

Tasting

The palate is broad and dynamic, with hints of ripe apples and a pleasant sweetness that is never cloying. The sip is fresh and enveloping, with a soft, fruity finish. Elegant.

Desruets

Maison Desruets is one of the oldest Champagne producers, founded in 1888. The Desruets family continues to use the original 1888 press, a wooden wine press that symbolizes an unbreakable connection with tradition and the quality of production. Located in Hautvillers, a village famous for its history in Champagne creation, the house has passed down the passion for artisanal production methods and attention to detail for generations. The Cuvée Signature is the result of this long tradition and love for a unique terroir.

Desruets

The vineyards are located in the best terroirs of Hautvillers, with a mix of clay-limestone soils that impart a characteristic minerality to the wines. The yield per hectare is around 75 quintals, and the harvest is done manually to ensure the selection of grapes at their optimal ripeness.

The vineyards of Champagne, stretching 150 km east of Paris, challenge the extreme conditions of the northern climate. Situated at the 49th parallel north, the grapes are cultivated with the help of the ocean's influence, which moderates the temperatures, and the extraordinary skills of the vignerons.

Average temperatures, just above 10°C, promote the slow ripening of the grapes, preserving their natural acidity. Despite the humid climate and frequent spring frosts, the region produces ideal grapes for Champagne, thanks to soils rich in chalk and other mineral components. The vineyards, spread over diverse terrains, extend across hills and plains, capturing the essence of the Mistral wind and the few hours of available sunlight.
